Abstract

Cariche di refrigerante solido vengono automaticamente inserite in una carcassa fresca di animale o in una porzione di una carcassa di animale mediante l'uso di un utensile di inserzione. La carica di refrigerante solido è contenuta in un compartimento dell'utensile che include anche una lama a lancia piatta. Quando la lama forma una fessura in un'area selezionata del muscolo, la carica di refrigerante solido viene posizionata positivamente, rapidamente e in modo consistente nella cavità che è stata appena aperta dalla lama a lancia. L'utensile di inserzione ed il processo sono particolarmente ben idonei per l'uso nel ridurre lo sviluppo di carne pallida, molle ed essudante, realizzando nel contempo ciò in una maniera che è rapida e riduce al minimo variazioni da carcassa a carcassa.
