Description
Claims (7)
- 全体に対して50重量%以上が個々の細胞の単位を残したままの状態で粉にしたうるち米の米粉を水に1〜10重量%混合し、加熱して糊化度を85%以上としたことを特徴とする米飯改良剤。
- 前記米粉の少なくとも40重量%以上は、メッシュサイズが100〜300メッシュの範囲にあることを特徴とする請求項1記載の米飯改良剤。
- 米飯改良剤の粘度は、連続的に加熱して経時的に測定した粘度の最高値の1/3以下であることを特徴とする請求項1又は2記載の米飯改良剤。
- 米飯改良剤に含まれる米澱粉粒の50%以上は、澱粉粒が残っており、かつ、複数の澱粉粒が連結して存在している状態となっていることを特徴とする請求項1乃至3のいずれか1項記載の米飯改良剤。
- 請求項1乃至4のいずか1項記載の米飯改良剤が、米飯に対して少なくとも2重量%以上添加され、米飯表面の少なくとも一部に前記米飯改良剤が被覆されていることを特徴とする米飯類食品。
- 前記米飯が、冷凍食品、チルド食品、レトルト食品、無菌米飯のいずれかであることを特徴とする請求項5記載の米飯類食品。
- 前記米飯が、白飯、玄米飯、穀物飯、炊き込み御飯、混ぜ御飯、お粥、茶飯、寿司、おにぎりのいずれかであることを特徴とする請求項5記載の米飯類食品。
