しかし、低い温度の水を用いて茶飲料を得るには、長時間(例えば、数時間以上)の抽出を要し、成分抽出効率が著しく低かった。

この結果は、本発明の製造方法から得られる茶葉製品においては、茶葉からの成分抽出効率が極めて優れることを示す。

これに対し、図2(A)に示されるとおり、比較例の乾燥茶葉(通常の緑茶)では、冷蔵庫内での抽出における成分溶出に時間が非常にかかり、本発明の製造方法から得られる茶葉製品と同等レベルの溶出率に達するまで、半日近くかかった。
なお、比較例の乾燥茶葉について、冷蔵庫内の代わりに、室温(約26℃)での抽出も行ったが(図2(B))、依然として成分の溶出に時間がかかり、本発明の製造方法から得られる茶葉製品と同等レベルの溶出率に達するまで、1時間近くかかった。

以上から、本発明の製造方法から得られる茶葉製品によれば、水(約4℃)による抽出であっても、顕著に抽出時間を短縮でき、効率的な成分抽出を実現できることがわかった。
