It is also well known that it has excellent emulsion stability. However, the emulsion stability of polymeric branched dextrins is equal to or lower than that of natural gums and decomposed products of modified starches.

Cyclodextrin produced by the action of cyclodextrin has a cyclic structure, has inclusion ability, and has excellent fragrance retention and emulsifying properties. However, cyclodextrin alone does not have sufficient emulsion stability compared to natural gum or modified starch. Furthermore, since cyclodextrin is expensive, it is not economical to add cyclodextrin to polymeric branched dextrin.

Long reaction times are required, and high concentrations of substrates require high levels of enzyme addition. As a means to solve these problems, there is a technique called enzyme immobilization. Among these, ion exchange resins are often used as carriers for immobilized enzymes because of their ease of immobilization and little damage to enzymes. However, if the substrate solution is a substance with a high molecular weight and high viscosity such as dextrin, which has been slightly decomposed by the action of α-amylase on waxy starch, it is difficult to obtain a high flow rate due to the resin structure. It is difficult and the reaction efficiency is low. Therefore, there is a problem in that when CGTase is immobilized on a resin, the enzyme utilization efficiency does not increase.

物が得られることを見出し本発明を完成した。(Means for Solving the Problems) As a result of intensive research, the present inventors have found that by using an ion exchange material sheet as an immobilization carrier for CGTase, a highly viscous polymer branched dextrin solution can be passed through at a high flow rate. It is possible to immobilize CGT a s even under high flow rates.
The present invention was completed by discovering that a cyclodextrin-coexisting polymer branched dextrin composition with high emulsifying properties can be obtained through the synergistic effect of the cyclodextrin produced by the action of e and the polymer branched dextrin.

However, if the isoelectric point of the enzyme is lower than reaction 1) H, an anion exchange group must be used, and in the opposite case, a cation exchange group must be used. For example, in macerans CGTase, a weakly basic DEAE zeta pretub can be used.

In other words, the substrate solution to be passed through is one obtained by liquefying waxy cornstarch so that E=10 or less. The means of liquefaction may be acid treatment or enzyme treatment. When D and E are 10 or more, the characteristics as a polymeric branched dextrin are lost. Substrate concentration is 1-50%
Preferably a concentration of 5-30% is used. As shown in FIG. 1, when the substrate concentration is high, the amount of cyclodextrin produced is low. The pH and reaction temperature may be such that the enzyme used produces cyclodextrin. For example, in the case of Macerans CGTase, pH 6, reaction temperature 50°C
Do it with (2) The flow rate is 5V=100 or less. As shown in FIG. 1, the faster the flow rate, the lower the cyclodextrin content. ■The larger the amount of immobilized enzyme (maximum 2200 U per ion exchange material sheet cartridge d), the higher the amount of cyclodextrin produced.

Furthermore, as the substrate concentration decreased, the amount of cyclodextrin produced increased. However, when compared at the same substrate concentration and flow rate, sheet immobilization produced more cyclodextrin than resin immobilization. That is, although the enzyme activity per unit was half in sheet immobilization compared to resin immobilization, the produced cyclodextrin content was twice as high.
