した、飲用に好適の乳酸発酵飲料を効率的に製造するこ
とができる効果がある。

Claims (1)

【特許請求の範囲】 1、果実処理物を生果汁換算で20重量%以上、野菜処
理物を生野菜汁換算で3〜10重量%、及び動物又は植
物乳製品を無脂乳固形分換算で3〜10重量%含有する
混合物の食品用一般乳酸菌による発酵液又は該発酵液の
濃縮液を主成分とする乳酸発酵飲料。 2、野菜処理物がトマト又はニンジン処理物である請求
項1記載の乳酸発酵飲料。 3、乳製品が脱脂粉乳である請求項1又は2記載の乳酸
発酵飲料。 4、果実処理物を生果汁換算で20重量%以上、野菜処
理物を生野菜汁換算で3〜10重量%、及び動物又は植
物乳製品を無脂乳固形分換算で3〜10重量%含有する
混合物の食品用一般乳酸菌による発酵液又は該発酵液の
濃縮液を主成分とし、菌体を含有する乳酸発酵飲料。 5、野菜処理物がトマト又はニンジン処理物である請求
項4記載の乳酸発酵飲料。 6、乳製品が脱脂粉乳である請求項4又は5記載の乳酸
発酵飲料。 7、果実を破砕や搾汁等して得られる果実処理物を生果
汁換算で20重量%以上、同様にして得られる野菜処理
物を生野菜汁換算で3〜10重量%、及び動物又は植物
乳製品を無脂乳固形分換算で3〜10重量%含有する混
合物を、殺菌し冷却した後、予備培養した食品用一般乳
酸菌を加えて乳酸発酵を行い、次いで菌体を分離して発
酵液を得、これを必要に応じて濃縮及び/又は調整する
乳酸発酵飲料の製造方法。 8、混合物のPHが4.5以上となるように予め果実処
理物のPH調整を行なう請求項7記載の乳酸発酵飲料の
製造方法。 9、乳酸菌としてラクトバシルス・ブルガリカス(L.
