でペクチンが分解され離水が著しくなり、最終的には上
層が水で下層がゼリーといった状態になってしまうとい
った致命的欠点を有している。アルギン酸類は褐藻類に

ロン酸で、その水溶液は乳化性を有し、又Mg、Hgを
除<2f−以上の金属イオンと反応し、耐熱性のある不

混合し水780gに分散させた。このものを80℃窪加
熱し溶解させ、砂糖170g、1/3リンゴ果汁60g
、クエンIlr!2g、アップルフレーノく−Igを加
え重量補正してアップルムースゼリー1Kgをえた。こ
れを60ccのカップに充填し85℃で15分間殺菌し
た。このものを37℃の恒温器にて1ケ月保存したが、
