でペクチンが分解され離水が著しくなり、最終的には上
層が水で下層がゼリーといった状態になってしまうとい
った致命的欠点を有している。アルギン酸類は褐藻類に
含まれる遊離のカルボキシル基をもった高分子のマンヌ
ロン酸で、その水溶液は乳化性を有し、又Mg、Hgを
除<2f−以上の金属イオンと反応し、耐熱性のある不
溶性のゲル3つくる性質を有しているため1食品工業に
於て様々の利用のされがたをしている。
