温度差が大きく、さらに前記した炊飯進行に伴う調理物
の伝熱抵抗増加も加わるようになる。このために調理物
の中心部への熱の回りが容器の底面、側面に接する周域
部分と比べて不足し、結果として中心部では低温炊飯の
まま炊き上がるようになる。
