[Detailed Description of the Invention] [Industrial Application Field] The present invention enables the easy production of pectin soda jelly that has the refreshing taste characteristic of carbonic acid and a fashionable appearance with uniformly dispersed air bubbles. Concerning a set for pectin soda jelly that can be used.

However, most of them are heated to dissolve the gelling agent or to sterilize the product after condensing the carbon dioxide gas, so even though they contain carbon dioxide gas, they only have that taste and are not absorbed into the gel. It is not possible to find a jelly that retains uniform air bubbles. In other words, even if a carbon dioxide-containing aqueous solution is mixed into a product and sealed in a pressure-resistant container, the product becomes a fluid sol by heating and can retain carbon dioxide or air bubbles within it. However, it separates from the sol.

As another example, an aqueous gelatin solution is mixed with an aqueous carbon dioxide solution, quickly filled into a pressure container, and then sealed. There is an example of heating the sol to a gel state and shaking the container to create foam, but in this case, it is necessary to adjust the filling amount as a condition for foaming. be. In other words, whether the filling amount is large or small, mixing of the contents is insufficient and foaming does not occur. In fact, there is no example of a structure in the container suitable for foaming, and no mention is made of the uniformity of the bubbles. Above all, in this case, the most difficult point is that the temperature range in which the sol transitions to gel is not clearly pointed out, and it can be said that capturing the timing of the transition from sol to gel is extremely difficult at the factory production level. .

That is, although foaming is possible in a sol state, it is difficult to retain the bubbles, and foaming is difficult in a gel state. Furthermore, since the gelling agent used in this example is gelatin, if the gelled contents are physically destroyed, the gel cannot be restored again.

In order to achieve the above object, the present invention includes liquid A, which is an aqueous solution containing calcium ions, liquid B, which is an aqueous rhohmethoxyl pectin solution, and liquid C, which is an aqueous carbonic acid solution, without mixing the liquids A and B. C liquid alone or A liquid,
This is a set for soda jelly, which is prepared by mixing it with either or both of the B liquids and filling them individually into containers.

Calcium ions in solution A form a gel by cross-linking with rhomethoxyl pectin in solution B, but
This gel formation must be carried out only when the soda jelly of the present invention is used. Therefore, it is necessary to fill separate containers with liquid A and liquid B without mixing them.

In addition, liquid C gives the finished soda jelly a unique carbonic acid flavor and works to maintain uniform air bubbles dispersed in the jelly by foaming carbon dioxide gas, and this foaming is performed at the same time as the formation of the gel. It will be done. Therefore, liquid C may be filled alone in a container, or may be mixed with either liquid A or liquid B and filled in a container. A liquid,

The calcium ions contained in the first liquid of the present invention are referred to as rhomethoxyl pectin (hereinafter referred to as LM pectin) in the second liquid.
It is a component for forming a gel by cross-linking between
It is preferably within a range of approximately gχ. If it is less than 50%, the number of calcium crosslinks between LM pectin molecules is small, and as a result, the gel strength of the jelly formed by mixing with liquid B becomes weak. On the other hand, if it is more than 150 mg%, the gel becomes brittle, so it is not suitable. Next, it is preferable that the first liquid contains 2.0 to 5.0 volumes of carbon dioxide gas. If it is less than 2 volumes, the refreshing feeling will be poor, and if it is more than 5 volumes, it will be too stimulating.

In addition, regarding the pH value of the second liquid, if the pH is lower than 3.5, the gel state of the jelly formed is brittle and syneresis occurs,

Fine bubbles of carbon dioxide gas are incorporated to create soft jelly with a refreshing taste and a fashionable appearance.

After cooling the first liquid container and the second liquid container obtained above in the refrigerator for 4 hours, take them out and pour equal amounts of both liquids in each container into a glass and stir gently. After leaving it for about 30 seconds, a soft jelly with a carbonic acid flavor and a beautiful appearance with uniformly dispersed bubbles was produced. In addition, when the soft jelly obtained as described above was immediately placed in a sealable container and stored in the refrigerator for 24 hours, it had a gel-like, refreshing taste unique to carbonic acid, and a beautiful appearance with uniformly dispersed bubbles. A jelly with the following properties was obtained.
