【発明の詳細な説明】 本発明は大豆の煮熟方法に係り、その目的は大
豆を短時間で煮熟する方法を提供するところにあ
る。

大豆を煮熟する一般的な方法は、原料大豆を長
時間水浸漬し、充分膨潤させたのち煮熟するので
あるが、この煮熟にも長時間を要し、またややも
すると、種皮が破れたり、大豆の形崩れが生じた
りして、例えば煮豆製品を目的とする場合など商
品価値を低下させるおそれがある。

たのち水切り放置し、これを蒸煮することによ
り、短時間で煮熟可能であるという知見を得て本
発明を完成させた。

ヤクルト製)0.2%含有水溶液1.2中に、25℃で
1.5時間浸漬したのち水切りし、そのまま30℃で
1時間15分放置した。

もなく、テクスチヤーに優れた煮豆であつた。

45分浸漬したのち水切りし、そのまま32℃に1時
間30分放置した。ついでこれをオートクレーブに
入れ、2.5Kg/cm2Gで15分蒸煮したのち冷却し、5
分間水煮したのち醤油、砂糖等を含む調味液で5
分間煮熟したところ、形崩れ等のない食感良好な
煮豆が得られた。
