Description
本発明は、冷温の度合に応じて可逆的に液状と
凝固状との間を状態移動する可逆性コンニヤクの
食品及び食品添加物に関するものである。
即ち本発明の要旨はコンニヤクいも又はコンニ
ヤク粉等の適当含水したものに各種弱塩基物又は
強塩基性物を微量添加して70℃以上の加熱処理し
て、冷温の度合に応じて可逆的に液状と凝固状と
の間を状態移動する可逆性コンニヤクを生成せし
め、それ自身食品となるか又はそれを水産加工製
品、畜肉加工製品、めん類、大豆加工、乳製品、
製菓、製パン、油脂、果実、そ菜、調味食品、酒
類、嗜好飲料、等に使用して、その食味、食感、
新規な食品を製造することに関する件である。
本発明の効果は、計り知れない、多様な商品を
生み出す可能性をもつたものであることを、従来
の「こんにやく」を説明しながら、順を追つて本
発明の具体的内容を以下に説明する。
従来の「こんにやく」の製造方法及びその輪か
くは次の文献の様なものである。

(1) こんにやく玉(こんにやくいも)
さといも科のこんにやくの球茎をこんにや
く玉といい、2〜3年のものを採取する。採
取適期は10月下旬から11月中旬までである。
8月下旬頃から採取したものもあるが、これ
はつるが枯れかかつて、玉がくさるのをおそ
れて、早取りしたもので品質がわるい。こん
にやく玉は、普通平円形のもであるが、先の
とがつたものもある。こんにやく玉の肩の部
分が糊化力が強いといわれ、とがつた部分は
弱い。
甲州地方、天竜川流域産のものは品質がよ
いが、茶の裏作、水田栽培のものは比較的わ
るい。近年南方産(ジヤワ、スマトラ、ボル
ネオの自生品)が入つてきているが、人の頭
の大きさほどあり乾燥して切干にして輸入さ
れる。内地産のものにくらべて安いが、糊化
力がわるい。
玉の保管
こんにやく玉はくさりやすいのでくさらな
いよう、また凍らないよう保存することが大
切である。このため風とおしのよい、凍らな
い場合に貯蔵する。俵のままつんでおいては
いけない。玉は酸がつよいので、ねずみによ
る害はない。
(2) こんにやく粉
玉を乾燥、粉砕したものでかなりあらく
(36メツシユ)重い粉である。手ですくつた
ときほこりのように飛散するものはデンプン
質で糊化力は弱く、この少ないものが良品で
あるといわれている。
(3) 水酸化カルシウム
食品添加物を使用すること、吸湿しやすい
のでかんに保管すること。
(4) 配合割合
板こんにやく:玉45Kg水酸化カルシウム1
Kg、水は玉の25〜30倍、952枚とり。
糸こんにやく:玉45Kg水酸化カルシウム1
Kg、水は玉の25〜30倍、254Kg出来上りこ
んにやく粉のときは、45Kgに対し粉6Kgで
よい。歩留りはわるい。
(2) 製法
(1) 糸こんにやく
水洗:玉を選別し大きさによつてわけ、大玉
はブラシで洗い、適当の大きさに切る。玉
はいも洗機で水洗する。ざるに入れてお
く。
蒸しあげ:大釜へ水洗した玉を入れ、冷水か
ら熱し、約2時間むす。7〜8分のむしが
糊化力が強く色は赤いのが一番よい。
ひき落し:むした玉をいもすり機に入れ、水
に流しながら石臼ですり、乳液として木桶
を入れる。木桶で入つた乳液はすぐ糊化し
てくるので竹の棒でときどき撹拌し、桶1
杯になつたとき、1.5時間ぐらい放置して
おく。このときには完全に糊化し、棒で撹
拌できなくなる。これは主成分のマンナン
が水を吸収して膨張し、粘度の高いコロイ
ド状態になるためである。
ねり上げ、石灰添加:水酸カルシウム1.5Kg
を入れ、水3.6にとかし乳液とする。作
業者は手に油をぬり、糊がつかないように
し、ひきおとし、糊化のすんだものをねり
機へ容量9のバケツ4〜5杯入れ、水約
9を加えて2〜3回回転させて、手での
りの状態をみて、水、石灰乳の量をきめ
る。この操作が重量で多年の経験が必要で
ある。つぎに石灰乳を加えて(一般には石
灰乳450mlに水5.4)、2〜3分間ぐらい
ねり機を回転させる。
絞り出し:圧力をかけて熱湯中に絞り出す。
そうめんのような太さで絞り出し、3回で
ねり機中のものがなくなるようにする。こ
れは太さが大きくなるためである。
(2) 板こんにやく
型詰めしたものを熱沸釜に重ねて4時間位
ねり冷却後切断する。
以上が文献的には、わかり易い部類の「こんに
やく」の製造方法等である。通称、家庭で食用と
している「こんにやく」とは常温時、高温時に於
いても安定で強固な、弾性に富んだ凝固物であ
る。
一方本発明の「こんにやく」は従来の常識では
考えられないものである。
即ち常温では、液状又は糊状、例えば、蜜の様
な粘性のある液状から、ペースト状迄の相を呈し
ている一方、温度高めてゆくと60℃以上では従来
の「こんにやく」の如く、強固な弾性に富んだ凝
固物になり、それが冷却すると又始めの液状又は
糊状に戻る特性を有し、全く新規な物質の誕生と
言はなければならない。
本発明者は、従来の「こんにやく」のもつ特性
を充分発揮すべく他の食品との混合等に利用する
ことの研究を重ねたが、しかしながら「こんにや
く」は「こんにやく」である以外ないとさえ一般
的に言はれている、難渋な壁を破りあぐねてい
た。即ちその用途として食品に混合し、その食感
を利用することは面白い問題ではあるが、技術的
には基本的な困難な問題が伏在している。
それは、先の文献にある如く、「こんにやく粉」
5Kg〜7Kgに対して水酸化カルシウム1Kg以上を
使用することはこの系が著しく強塩基で他の食品
に混合することが基本的に困難な問題である一
方、その加熱処理養成の時間が数時間から十数時
間に及ぶことにも多くの問題を宿している。
即ち従来の「こんにやく粉」「こんにやく玉」
から「こんにやく」を製造する方法では、他の食
品と混合して従来の「こんにやく」のもつ食感を
有効に利用することは、著しく困難である。
本発明者は「こんにやく」の製造方法について
上記の様な強塩基性下で製造する方法を、別の方
法で「こんにやく」を製造すべく改良研究を行な
つていたところ、先述の如く冷温の度合によつて
液状又は糊状、例えば、粘液状からペースト状等
より、凝固状例えば固い「こんにやく」への状態
移動が、可逆的に行なわれる本発明の「こんにや
く」を発見するに至つた。(注)以后本発明の「こん
にやく」を可逆性コンニヤクと記述する。
しかも、可逆性コンニヤクは、食品又は食品添
加剤として著しい特徴のある効果がある。即ちそ
れ自身が多様な食品になる一方、添加剤として他
の食品との併使用によつて、全く新しい食品を生
むに至つた。
それを例をもつて端的に述べれば、畜肉ねり製
品に於いて、冷時には固く、温時には柔くなるの
が普通であるが、本発明の可逆性コンニヤクを、
該ねり製品に適当少量添加すると、冷時と温時の
固さは殆んど同じになり、多量に添加すると、冷
時に柔く、温時に固くなるという、従来の常識を
超えた、畜肉ねり製品を収得することが出来るの
である。
次に本発明の方法を具体的に説明する。
本発明に使用する、コンニヤクいも又はコンニ
ヤク粉等の適当含水したものは、先述した化学工
業社版食品製造工程図集の説明にある、コンニヤ
クいも及びコンニヤク粉の水性液即ちゾル状或い
はゲル状のものである。
(注) 本発明で使用するコンニヤクの原料は、精製
コンニヤク粉を使用する。コンニヤクいもは保
存状況、生産地、等によつて性質が不安定であ
り且つ入手が簡便でないため、性状の安定した
精製コンニヤク粉を使用した方が、本発明の説
明には正鵠を得たものと思われるので、本発明
の実施例及び本発明の説明は、コンニヤク原料
を代表して精製コンニヤク粉を使用した条件に
於いて記述する。
精製コンニヤク粉の使用方法は、用途品質に応
じて水分量、膨潤時間、膨潤温度等を考慮するこ
とが好ましい。
(注) 精製コンニヤク粉と水との混合物を以后精製
コンニヤク粉水性液と呼称する。
即ち、冷時の条件を主とする場合、又は温度の
条件を主とする場合によつて異なる。端的には、
冷時に於いて液かペーストかであり、温時に於い
て柔い凝固か固い凝固かということである。よつ
て、「精製こんにやく粉」と水との比率は、目的
に応じて決めることが好ましい。実用的な「精製
こんにやく粉」0.1%〜7.0%、水分99.9%〜93.0
%の比率が多く利用される。
本発明に使用するクエン酸ナトリウム、酒石酸
ナトリウム、リンゴ酸ナトリウム、乳酸ナトリウ
ム、酢酸ナトリウム、コハク酸ナトリウム、等の
単独又は混合したもの、或いは炭酸カルシウム
((注)以下単に触媒等と呼称する)との併用等の使
用に於ける品質は、食品に使用出来るものであれ
ば差支えない。又その使用量は、精製こんにやく
粉の質及び、その水性濃度及び、目的とする可逆
性コンニヤクの内容によつて異なる。よつて触媒
使用量は、予め少量実験によつて使用量を調整し
て最終使用量を決定することが好ましい。
標準的方法として本発明で行なつている方法の
一例を参考に述べれば、例を精製こんにやく粉水
性液の4%濃度をつくる。その水性液のPHはPH
5.4〜6.2前后が普通である。よつて、触媒の添加
量は、それにPH値として約+0.2を下限とし、上
限はPH10.0以内に止める様に添加する。即ち該水
性液4%濃度でPH5.8で、目的とする可逆性コン
ニヤクが温時に普通の「こんにやく」の固さで、
且つ冷時に柔かいペースト状にしたい場合、クエ
ン酸ナトリウムと炭酸カルシウムの併用によつ
て、90℃±5℃に加温して可逆性コンニヤクを生
成させる。
以上の様に触媒の添加に於いては、多様な前提
条件があるので、先述した如く、その都度(ロツ
ド別)予備実験によつて条件設定することが好ま
しいことになる。
触媒の使用量は単純にg数で表示する場合と、
PHで表示する場合の2通りである。たゞ天然物原
料なので夾雑物によつては、一定した値が出な
い。本発明の説明ではその都度わかり易い方法
で、g数、PH値を混ぜて行う。又上記したクエン
酸ナトリウムと炭酸カルシウムの混合使用に於け
る比率は、上限PHに到達するのに効果的な混合比
率があるので、予備実験によつて比率を決めるこ
とが好ましい。
本発明の方法を参考に述べれば、炭酸カルシウ
ムの使用量は他の触媒より少なめが普通に行なわ
れている。
例えば炭酸カルシウム:クエン酸ナトリウム
1〜10等である。又炭酸カルシウムを除く他の
各々の触媒との混合比率は、目的とする可逆性コ
ンニヤクの質、触媒の最少使用量、経済性、作用
効果等とのかねあいもあるので予備実験によつて
比率を決めることが好ましい。
精製こんにやく粉水性液と、触媒との混合物の
反応条件は次の如き内容である。
温度条件
該混合物から可逆性コンニヤクへの反応速度は
該混合物が触媒量が一定の場合を条件とすると加
熱温度、時間によつて大きく作用する。例えば或
る触媒量条件に於いて加熱温度を90℃以上にした
場合反応時間30分間程で反応が終つたとした場合
70℃にすると5時間以上を必要とする場合があ
る。又上記条件で触媒をふやすと10分間程度で反
応が終了する場合がある。
よつて温度条件、加熱時間は使用触媒の質及び
量、関接的には目的とする可逆性コンニヤクの質
(適目的)によつて左右されるが本発明の方法を
参考に述べれば90℃以上の加温で1時間を目標と
すれば標準的な、精製コンニヤク粉水性液と触媒
との反応による可逆性コンニヤクの収得条件の一
つになる。
本発明に使用するポリリ酸ナトリウム、ポリリ
ン酸カリウム、ピロリン酸ナトリウム、ピロリン
酸カリウム、メタリン酸ナトリウム、メタリン酸
カリウム、リン酸(1〜3)ナトリウム、リン酸
(1〜3)カリウム、リン酸(1〜2)アンモニ
ウム、等の内容は次の如きものである。ポリリン
酸ナトリウム、ポリリン酸カリウム、ピロリン酸
ナトリウム、ピロリン酸カリウム、メタリン酸ナ
トリウム、メタリン酸カリウム、リン酸(1〜
3)ナトリウム、リン酸(1〜3)カリウム、リ
ン酸(1〜2)アンモニウム、等の単独又は混合
したもの、或いは炭酸カルシウムとの併用等の使
用に於ける品質は食品に使用出来るものであれば
差支えない。又その使用量は精製こんにやく粉の
質及び、その水性濃度及び、目的とする可逆性コ
ンニヤクの内容によつて異なる。よつて触媒使用
量は、予め少量実験によつて使用量を調整して最
終使用量を決定することが好ましい。

ム1〜20等である。又炭酸カルシウムを除く他の
各々の触媒との混合比率は目的とする可逆性コン
ニヤクの質、触媒の最少使用量、経済性、作用効
果等とのかねあいもあるので予備実験によつて比
率を決めることが好ましい。
精製こんにやく粉水性液と触媒との混合物の反
応条件は次の如き内容である。

該混合物から可逆性コンニヤクへの反応速度は

本発明に於ける冷温の度合に応じて可逆的に液
状と凝固状との間を状態移動をする可逆性コンニ
ヤクの内容は次の通りである。
冷温の度合の冷の場合は、凍結しない条件で、
温の場合は、レトルト加工又は缶詰加工温度迄で
ある。例えば、平均的には、摂氏マイナス5℃よ
り+150℃附近である。
液状と凝固状の間とは糖蜜の様な粘性のある液
性から、ペースト状をへて固い凝固状迄で、その
凝固状のその固さは、プデイング状から、通常市
販されている固い「コンニヤク」の間である。
以上の温度と状態との関係に於ける可逆的効果
は、次の様に一般的に纒めることが出来る。冷時
に於いて、薄い粘度の糖蜜の様な液性の可逆性コ
ンニヤクは、温時に於いては、やゝ固めのプデイ
ング状が平均的な態様である。又冷時に於いて、
ペースト状(通称ジヤム状と言はれている態様)
のものは温時に於いては、先述した市販コンニヤ
クの固さになるのが平均的態様である。
以上が可逆性コンニヤクの平均的可逆態様であ
るが他と食品と混合したり、種々の添加物との混
在によつて、その最終可逆性は変るので、目的と
する可逆性を得たい場合は、食品との混合比率、
他の添加物との混在による可逆性の変化を充分小
実験によつて検して后、条件を決めることが好ま
しい。
本発明に於ける、可逆性コンニヤクの食品及び
食品添加物とは次の内容になる。
可逆性コンニヤクは先記した如く、冷時に液状
から始まつてペースト状迄、温時にプデイング状
から固い凝固状になる他澱粉を添加して、冷時、
温時とも殆んど同じ食感にする方法もある。よつ
て食品又は食品添加物として利用することによつ
て、多種多様な新規の食品が生成される。
次に代表的食品名等を例示する。
(注)(1) 可逆性コンニヤクの食品への利用について
使用するフレーバ、調味料、エキス等の内容
は、例示食品に沿つたものを利用するので詳
細は記入しない。食品名はよつて添加された
フレーバ名又は被添加食品名を付す。
(2) 例示食品名は次の順によつて表示する。
冷時に於ける食品の状態、温時に食用され
る食品の状態と上記の名称を付す。
又可逆性コンニヤクの食品添加物としての
利用について、使用される被添加食品は、上
記食品名の后に( )内に記載する。例えば
従来のソーセージに本発明の可逆性コンニヤ
クを添加して同じ様な食感のソーセージを製
造した場合、( )内に「ソーセージ原料」
と記入する。又単純混合の場合は被添加食品
名のみ記入する。

以上の代表例により例を抽出して、可逆性コン
ニヤクの食品及び食品添加物への扱い方を以下説
明する。可逆性コンニヤクの使用方法は、大別し
て3系になる。例えば、可逆性コンニヤクにフレ
ーバー、エキス、其の他の添加剤を混入せしめて
直接食品とする場合と、可逆性コンニヤクをすで
にある完成された食品と混合する場合と、完成前
食品に混合して加工完成する方法等である。
可逆性コンニヤクの食品
(1) 液態オレンヂプデイング
液状可逆性コンニヤクにオレンヂフレーバ
ー、クエン酸、砂糖、着色料を混合して、液態
オレンヂプデイングとする。好みに応じて混合
割合は自由に調節出来る。
冷時液状で温時プデイング状になる。
(2) ペーストチーズ豆腐様
ペースト可逆性コンニヤクにチーズフレーバ
ー、調味料、着色料を混合して、ペーストチー
ズ豆腐様とする。好みに応じて、混合割合は自
由に調節出来る。
冷時ペースト状で温時凝固状になる。
可逆性コンニヤクの食品添加物
(1) 液態しる粉
通常市販されている缶詰しる粉(ペースト
状)に液状可逆性コンニヤクを2:1の割合で
混入充分混合して液態しる粉とする。好みに応
じて混合割合は自由に調節出来る。
冷時液状で温時ペースト状になる。
(2) 液態奴豆腐
通常市販されている、絹ごし豆腐に液状可逆
性コンニヤクを1:3の割合で混在せしめ充分
混合して液態奴豆腐とする。好みに応じて混合
割示は自由に調節出来る。
冷時液状で温時凝固状となる。
(3) 通常の「かまぼこ」を製造すべくスケトウす
り身が塩ずり等をへて澱粉等を添加し調味され
たものにペースト状可逆性コンニヤクを1:1
の割合で混在せしめて混合物とする。
混合割合は自由に調節出来る。該混合物を蒸
気蒸しを行なつてかまぼことする。
冷時ソフト感があつて、温時固くなる。
(4) 市販イチゴジヤムにペースト状可逆性コンニ
ヤクを1:1の割合で混在せしめ、充分混合し
て、ジヤム状イチゴジヤムとする。好みに応じ
て混合割合は自由に調節出来る。
冷時ジヤム状で、温時固く凝固する。
(5) 豚肉すり身に調味料野菜裁断物を混在せしめ
シユーマイあん部とし、それにペースト状可逆
性コンニヤクを1:1の割合で混在せしめ、充
分混合する。好みに応じて混合割合は自由に調
節出来る。それを麺包して蒸気蒸しし、シユー
マイとする。
冷時ソフト感があり、温時固く凝固する。
(6) 市販マヨネーズにペースト状可逆性コンニヤ
クを1:1の割合で混在せしめ、充分混合して
ペースト状マヨネーズとする。好みに応じて混
合割合は自由に調節出来る。冷時ペースト状で
温時硬く凝固する。
以上が、可逆性コンニヤクからの食品及び食品
添加物の概要である。
又温時に於ける食感、即ち凝固状又は固い凝固
状を冷時に於いて望みたい場合は澱粉量をコント
ロールして添加するとその効果は自由に調節出来
る。
例えば、通常の「かまぼこ」を製造すべく、ス
ケトウすり身が塩ずり等をへて、調味されたもの
に、ペースト状可逆性コンニヤクに澱粉を混在せ
しめたものを1:1の割合で混合する。混合割合
は自由に調節出来る。該混合物を蒸気蒸しを行な
つてかまぼことする。冷時と温時とも硬く凝固す
る。
ペースト状可逆性コンニヤクに澱粉を混在せし
める割合は、使用目的に応じて調節することが好
ましい。
本発明による一つの参考では30%重量以内の澱
粉添加量が一般的でそれ以上になると、旨さが損
なわれる場合が多くなる。
本発明に於いては、上記した如く、可逆性コン
ニヤクを予め生成せしめてから、食品又は食品添
加物にする方法と、コンニヤクいも又はコンニヤ
ク粉等の適当含水したものにフレーバー、調味料
食品等と可逆性コンニヤク化の触媒、一例として
クエン酸ナトリウム、或るいはポリリン酸ナトリ
ウム或いは炭酸カルシウム等を添加、混合后、そ
れを加熱して、結果として、可逆性コンニヤクの
食品又は添加物として混在する食品を収得する方
法がある。しかしながら可逆性コンニヤクを生成
せしめてから利用する方が、その触媒の除去又は
中和が可逆性コンニヤクから出来るので、上記し
た方法をとるより、より好ましい方法である。
以上が本発明の詳細である。
即ち本発明の特徴とするところは次の様に纒め
ることが出来る。
(1) コンニヤクいも又はコンニヤク粉から、冷温
の度合に応じて可逆的に液状と凝固状との間を
状態、移動する可逆性コンニヤクの製造法であ
ること。
(2) 該可逆性コンニヤクが、容易に且つ安価に製
造出来る。
(3) 該可逆性コンニヤクが、食品として安全であ
るということ。
(4) 該可逆性コンニヤクが、食品又は食品添加物
として、新しい食品の誕生に有効に寄与するこ
と、
別に本発明の詳細を実施例をもつて説明する。
次に本発明の特許請求の範囲第1項の食品及び
食品添加物の利用方法を各々食品等に分けて詳述
する。
(注)(1) 使用可逆性コンニヤクの濃度は、通称コン
ニヤク分と言はれているものの、水に対する
割合いを以后の説明に於いて用いる。(例)
として3%可逆性コンニヤクとは、コンニヤ
ク分の乾燥重量3に対し水97重量である。
(2) 可逆性コンニヤクに澱粉を混在せしめ、そ
れを可逆性コンニヤクとして使用する場合、
例として10%澱粉、3%可逆性コンニヤクと
記載してあつた場合、重量比で3%可逆性コ
ンニヤク100に対し澱粉10を添加した混合物
である。
(3) 冷時にソフト化、温時に凝固の状態の比べ
方は次の規準によつて表示する。
温時、凝固

(4) 各種食品の各々に可逆性コンニヤクを混入
し后のその食品の名称は、各々の元の名称で
呼称する。例えば酒と可逆性コンニヤクとの
混合物も、酒と呼称する。よつて混合物を生
成させることを「酒を製造する云々」という
表現になる。
冷温の度合に応じて可逆的に液状と凝固状との
間を状態移動をする可逆性コンニヤクの食品及び
食品添加物を水産加工製品及び畜肉加工製品の食
味、食感調整料新規成形料等として使用する利用
方法の内容は次の通りである。
(a) 主なる水産加工製品
水産ねり製品
かまぼこ類、はんぺん類、魚肉ソーセージ
類、つみいれ類、さつまあげ類、はくてん類
魚貝類製品
魚貝類つけ物、魚貝類煮物、魚貝類焼物

次に水産ねり製品の代表例として新規の「かま
ぼこ類」の製造の一態様に関して説明する。
充分に水晒したグチ肉を塩ずり、調味添加、で
ん粉添加を行なつた后、成形して80〜90℃の蒸気
蒸し処理を行なつて製造した「かまぼこ」をコン
トロールとしてAと記号し、別に、該でん粉添加
后3%可逆性コンニヤクを、重量比でグチ肉100
に対し100添加し充分混和后、成形して80℃〜90
℃の蒸気蒸し処理を行なつて出来た「かまぼこ」
をBと記号し、別に該でん粉添加后に10%澱粉、
3%可逆性コンニヤクを、重量比でグチ肉100に
対し100添加し、充分混和后、成形して80℃〜90
℃の蒸気蒸し処理を行なつて出来た「かまぼこ」
をCと記号した場合各々の食感を単純に硬さの比
で比べると以下の通りである。

以上の値は一般的なものであるが、その性質は
充分現われている。
よつて水産ねり製品に対する、可逆性コンニヤ
クの使用量は原料のコンニヤクの質、目的の食
味、食感、魚種、その魚質等によつて異なるの
で、予め実験によつてその都度、条件を確めて使
用量を決めることが好ましい。
次に魚貝類製品の代表例として2例を揚げる。
はじめに魚貝類焼物の新規の鯛の焼物の一態様に
関して説明する。
生鯛の表面に、1%含塩の2%可逆性コンニヤ
クを厚さ2〜5mmで塗布、弱いガス火で焼く、約
10分間で加熱を中止し、表面の膜状物及び凝固物
を除去すると、みずみずしい鯛の加熱処理したも
のを収得する。塗布厚さによつて鯛の色調を容易
にコントロール出来る。この場合の可逆性コンニ
ヤクの質は、あまり大きな問題にはなりにくい。
又魚貝類の漬物のうち「真ダラ」のみそ漬の一
態様について説明する。
市販みそに1%可逆コンニヤクを重量比1:1
で混合したものに「真ダラ」の切身を漬込み、96
時間程度で漬込みを打切り、その漬物を弱いガス
火で焼く、5分間程度で焼き上る。冷時ソフト
で、温時適当な固さのある漬物切身の焼物を収得
する。
以上から魚貝類製品に対する、可逆性コンニヤ
クの使用量は、原料のコンニヤクの質、目的の食
味、食感、魚貝の種、魚貝の質等によつて異なる
ので予め、実験によつてその都度、条件を確めて
使用量を決めることが好ましい。
次に畜肉加工製品の代表例として新規のハンバ
ーグの一態様に関して説明する。
豚、牛重量比1:1の混合肉の合挽に4%可逆
性コンニヤクを1:0.3の比率で混合し、それに
調味料、香辛料を添加平均に混ぜあわせたものを
成形、加熱処理して、ハンバーグを収得する。冷
時ソフトで肉の味の旨いものである。
以上から畜肉加工製品に対する、可逆性コンニ
ヤクの使用量は、原料のコンニヤクの質、目的の
食味食感、畜肉の種類、畜肉の質等によつて異な
るので、予め、実験によつてその都度、条件を確
めて使用を決めることが好ましい。
上記詳述の如く、本発明の特徴とする所は次の
様にまとめることが出来る。
(1) 可逆性コンニヤクは、水産ねり製品及び畜肉
加工製品等の本来の味を大幅に損ねることの少
ない増量料である。
(2) 可逆性コンニヤクの添加された水産ねり製品
及び畜肉加工製品は、従来の常識である所の冷
時には固いという食感を、逆に冷時にはソフト
であるという食感を変えた新規の食品になる。
(3) 可逆性コンニヤクの性質が食品のPHによつて
大きく左右されにくいこと。
(4) 可逆性コンニヤクは保水性が高いため、それ
を食品に塗布して膜とした場合、加熱処理を直
火による場合でも食品の損傷が少なく、方法に
よつては蒸し状態になる。
(5) 可逆性コンニヤクは、種々の食品添加物及び
調味料と平均に混りあい易いので、それを利用
した漬物、煮物等食品の加工に於いてその食品
に可逆性コンニヤクの性質を浸透させ易い。
(6) 可逆性コンニヤクは、コンニヤク分の多くな
る程ゲル強度が強くなるため、食品素材、食品
と容易に混合し易いし又、その成形加工性が優
れている。
本発明の詳細は別に実施例をもつて説明する。
冷温の度合に応じて可逆的に液状と凝固状との
間を状態移動をする可逆性コンニヤクの食品及び
食品添加物をめん類、大豆加工、乳製品等の、加
工食品の食味、食感調整料新規成形料等として使
用する利用方法の内容は次の通りである。
(a) 主なるめん類、製品
小麦粉系 うどん、らーめん、麺帯(わんた
ん、ぎようざ皮)スパゲテイー、乾
めん。
其の他{そば
(b) 主なる大豆加工製品
豆腐類、豆乳プデイング、がんもどき。
(c) 主なる乳製品
チーズ類、コンデンスミルク、牛乳プデイン
グ、其の他の新規飲乳
次にめん類製品の代表例として新規の「麺帯」
の製造の一態様に関して説明する。
小麦粉(強力粉)に対し4%可逆性コンニヤク
重量比で100:55を混じて充分〓り、ロール圧延
して麺帯をつくる。実質水分外%で52%以上にな
る。通常45%以上水分(外%)では作業性が著し
く悪くなるが、上記可逆性コンニヤクを混入した
ものは、50%以上水分(外%)でも成形作業が容
易である。又含可逆性コンニヤクの麺帯は、長時
間沸騰湯浴中でも、姿が崩れにくい。
以上麺類製品に対する、可逆性コンニヤクの使
用量は、原料のコンニヤクの質、目的の食味、食
感、小麦粉の種類、その品質等によつて異なるの
で、予め実験によつてその都度条件を確めて使用
量を決めることが好ましい。
次に大豆加工製品の代表例として新規の「豆
乳」の製造の一態様に関して説明する。
市販豆乳に0.5%可逆性コンニヤクの重量比
1:1で混合して、豆乳とする。
即ち冷時液状で温時プデイング状の例えば豆腐
状の豆乳を収得する。
以上大豆加工製品に対する、可逆性コンニヤク
の使用量は、原料のコンニヤクの質、目的の食
味、食感、大豆加工品の種類、その品質等によつ
て異なるので予め実験によつてその都度条件を確
めて使用量を決めることが好ましい。
次に乳製品の代表例として新規の「牛乳」の製
造の一態様に関して説明する。
市販牛乳に0.5%可逆性コンニヤクを重量比
1:1で混合して「牛乳」とする。
即ち冷時液状で、温時プデイング状の例えば豆
腐状の牛乳を収得する。
以上乳製品に対する、可逆性コンニヤクの使用
量は、原料のコンニヤクの質、目的の食味、食
感、乳製品の種類、その品質等によつて異なるの
で予め実験によつてその都度条件を確めて使用量
を決めることが好ましい。
上記詳述の如く本発明の特徴とするところは次
の様にまとめることが出来る。
(1) 可逆性コンニヤクは、めん類、大豆加工製
品、乳製品等の本来の味を大幅に損ねることの
少ない増量料である。
(2) 可逆性コンニヤクの添加された、めん類、大
豆加工、乳製品等は食味、食感にソフト感があ
る。
(3) 可逆性コンニヤクの性質が食品のPHによつて
大きく左右されにくいこと。
(4) 可逆性コンニヤクが、めん類、大豆加工製品
に混在するとき、耐熱性且つ湯浴でも姿崩れし
にくくなる。
(5) 可逆性コンニヤクと豆乳又は牛乳又は其の他
の飲料との混合物は、冷時液状、温時プデイン
グ状の全く新規な飲乳製品が出来る。
本発明の詳細は別に実施例をもつて説明する。
冷温の度合に応じて可逆的に液状と凝固状との
間を状態移動をする可逆性コンニヤクの食品及び
食品添加物を製菓、製パン等に、食味、食感調整
料として使用する利用方法。の内容は次の通りで
ある。
(a) 主なる製菓製品
羊かん類;あん類、カステラ類、ゼリー類、
クリーム類;蜂蜜ペースト
(b) 主なるパン製品
食パン類;菓子パン類。
次に製菓製品の代表例として新規の「あん類」
の製造の一態様に関して説明する。
市販あづきあん(ペースト状)に対し1.0%可
逆性コンニヤク重量比で1:1を混じて充分混合
して、常温に於いて高粘性液性の「あづきあん」
とする。即ち冷時液状で温時凝固状の例えば、羊
かん状の「あづきあん」を収得する。
以上菓子製品に対する、可逆性コンニヤクの使
用量は、原料のコンニヤクの質、目的の食味、食
感、菓子製品の種類、その品質等によつて異なる
ので予め実験によつてその都度条件わ確めて使用
量を決めることが好ましい。
次にパン製品の代表例として新規の食パンの製
造一態様に関して説明する。
小麦粉(強力粉)に、イースト、砂糖、バタ
ー、塩、と小麦粉の1/2重量の4%可逆性コンニ
ヤクとを混合充分練り上げ、次工程の醗酵を行
い、ガス抜き后240℃〜250℃で30分間加熱してパ
ンを収得する、常温でソフトな、きめ細かいパン
を収得する。
以上パン製品類に対する、可逆性コンニヤクの
使用量は、原料のコンニヤクの質、目的の食味、
食感、パンの種類、等によつて異なる。好ましく
は予め予備実験によつてその都度条件を確めて使
用量を決めることであるが、一般的には4%可逆
性コンニヤクの使用量に例をとると、小麦粉に対
する水の使用量の同量か又は1.5倍迄が常用され
る。
上記詳述の如く本発明の特徴とするところは、
次の様にまとめることが出来る。
(1) 可逆性コンニヤクは、菓子、パン類の本来の
味を大幅に損ねることの少ない増量料である。
(2) 可逆性コンニヤクの添加された、菓子、パン
類等の食味、食感にソフト感をあたえる。
(3) 可逆コンニヤクの性質が食品のPHによつて大
きく左右されにくいこと。
(4) 可逆性コンニヤクの添加された菓子、パン類
等の気泡、等はきめ細かく、食べ易い。
(5) 可逆性コンニヤクによつて作られるクリーム
類は熱に強く冷時ソフトで著しい特徴がわか
る。
本発明の詳細は別に実施例でもつて説明する。
冷温の度合に応じて可逆的に液状と凝固状との
間を状態移動をする可逆性コンニヤクの食品及び
食品添加物を油脂、果実、そ菜等の加工食品の食
味、食感調整料として使用する利用方法の内容は
次の通りである。
(a) 主なる油脂製品
バター類、マーガリン類、油脂混在ペースト
類、チヨコレートペースト。
(b) 主なる果実製品
ジヤム、マーマレード類、ジユース類、果実プ
デイング類。
(c) 主なるそ菜製品
いも類ペースト、そ菜ペースト類。
次に油脂製品の代表例として新規の油脂混在ペ
ースト類の製造の一態様に関する説明をする。
4%可逆性コンニヤクにピーナツツ粉末、砂
糖、塩等と、該可逆性コンニヤクの重量の30%の
油脂を添加、充分混和してピーナツツペーストと
する。
即ち冷時にペースト状、温時に凝固状になる、
ピーナツツペーストを収得する。
以上油脂製品に対する可逆性コンニヤクの使用
量は、原料のコンニヤクの質、目的の食味、食
感、油脂製品の種類、その品質等によつて異なる
ので予め実験によつてその都度条件を確めて使用
量を決めることが好ましい。
次に果実加工製品の代表例として新規のジユー
ス類の製造の一態様に関する説明をする。
市販オレンヂジユースに0.5%可逆性コンニヤ
クを重量比で1:2で混合して、稍々粘性のある
オレンヂジユースとする。
即ち冷時に稍々粘性のある、ジユースで、温時
にプデイング状になるオレンヂジユースを収得す
る。
以上果実加工製品に対する可逆性コンニヤクの
使用量は、原料のコンニヤクの質、目的の食味、
食感、果実製品の種類、その品質によつて異なる
ので予め実験によつてその都度条件を確めて使用
量を決めることが好ましい。
次にそ菜加工製品の代表例として新規のいもペ
ースト類の製造の一態様に関する説明をする。
皮むきされ、蒸された馬令薯をすり潰したる后
冷却し、それに4%可逆性コンニヤクを重量比で
2:1の割合に混練して、いもペーストとする。
冷時にペースト状で温時に凝固するいもペース
トを収得する。
以上そ菜加工製品に対する、可逆性コンニヤク
の使用量は、原料のコンニヤクの質、目的の食
味、食感、そ菜製品の種類、その品質等によつて
異なるので予め実験によつてその都度条件を確め
て使用量を決めることが好ましい。
上記詳述の如く、本発明の特徴とするところは
次の様に纒めることが出来る。
(1) 可逆性コンニヤクは、油脂、果実、そ菜等の
加工食品の本来の味を大幅に損ねることの少な
い増量料である。
(2) 可逆性コンニヤクは油脂等に対するソフト感
をあたえる。
(3) 可逆性コンニヤクの性質はPHによつて左右さ
れることは少ない。
(4) 可逆性コンニヤクと果実、そ菜との混合物は
全く新しい型の食品である。即ち冷時にペース
トで温時にプデイングになることである。
本発明の詳細は別に実施例をもつて説明する。
冷温の度合に応じて可逆的に糊状と凝固状との
間を状態移動をする可逆性コンニヤクの食品及び
食品添加物を調味食品の食味、食感調整料として
使用する利用方法の内容は次の通りである。

次に調味食品の代表例として新規の「マヨネー
ズ類」の製造の一態様に関して説明する。
市販マヨネーズに4%可逆性コンニヤクを重量
比1:1で混合し、マヨネーズとする。
即ち冷時にペースト状、温時に凝固状になる、
マヨネーズペーストを収得する。
以上調味食品に対する、可逆性コンニヤクの使
用量は、原料のコンニヤクの質、目的の食味、食
感、調味食品の種類その品質等によつて異なるの
で予め実験によつて、その都度条件を確めて使用
量を決めることが好ましい。
上記詳述の如く本発明の特徴とするところは、
次の様に纒めることが出来る。
(1) 可逆性コンニヤクは、調味食品の本来の味を
大幅に損ねることの少ない増量料である。
(2) 可逆性コンニヤクの添加された、調味食品は
食味、食感にソフト感をあたえる。
(3) 可逆性コンニヤクの性質が食品のPHによつて
大きく左右されにくいこと。
(4) 可逆性コンニヤクは、調味食品に混在すると
き温時に於いてはそのまま惣菜として利用出来
る場合がある。即ち冷時に於いてペースト状で
温時に於いて凝固状になるため、全く新規な調
味食品の誕生になる。
本発明の詳細は別に実施例をもつて説明する。
冷温の度合に応じて可逆的に液状と凝固状との
間を状態移動をする可逆性コンニヤクの食品及び
食品添加物をアルコール飲料、嗜好飲料、等の食
味、食感調整料として使用する利用方法。の内容
は次の通りである。
(a) 主なるアルコール飲料類
酒類、ウイスキー類、
(b) 嗜好飲料
茶類、コーヒー類、紅茶類、漢方薬類。
次にアルコール飲料の代表例として新規の
「酒」の製造の一態様に関して説明する。
市販日本酒に1%可逆性コンニヤクを重量比で
1:3で混合し酒とする。
即ち冷時に弱いゲル状で温時にプデイング状に
なる酒を収得する。以上アルコール飲料類に対す
る可逆性コンニヤクの使用量は、原料のコンニヤ
クの質、目的の食味、食感、アルコール飲料の種
類、その品質等によつて異なるので予め実験によ
つて、その都度条件を確めて使用量を決めること
が好ましい。
次に嗜好飲料の代表例として新規の「コーヒ
ー」の製造の一態様に関して説明する。
市販インスタントコーヒーを0.3%可逆性コン
ニヤクに混入し充分混合して、粘性のあるコーヒ
ー液とする、冷時に粘性のある液性で、温時にプ
デイング状になるコーヒー液を収得する。
以上嗜好飲料類に対する、可逆性コンニヤクの
使用量は、原料コンニヤクの質、目的の食味、食
感、嗜好飲料の種類、その品質等によつて異なる
ので予め実験によつてその都度条件を確めて使用
用を決めることが好ましい。
上記詳述の如く本発明の特徴とするところは次
の様に纒めることが出来る。
(1) 可逆性コンニヤクは、アルコール飲料、嗜好
飲料の本来の味を大幅に損ねることなく、混合
しあう。
(2) 可逆性コンニヤクの性質が該飲料類のPHに大
きく左右されない。
(3) 可逆性コンニヤクが該飲料類に混在すると
き、冷時に液状、温時にプデイング状の全く新
規な該飲料系を形成する。
次に本発明の具体的実施例を詳述する。
註(1) コンニヤク粉は市販品を使用したが、ロツ
ト別に購入したゝめ、その性質の差異が大き
く、特に酸度は一定していない。
(2) 生成可逆性コンニヤクは、80℃及び15℃に
於ける状態を比べる下記の様な規準によつて
状態を説明する。

原 料
上記中、「凝固」に於いての離水は、離水
の多いものは液状Bになる。又、性質が上記
各項の中間のものは近い方の表現を使う。
又、アルフアベツトの肩に+印は稍々強いこ
と、-印は稍々弱いこと。
(3) 食品及び食品添加物の実施例に使用する可
逆性コンニヤクは、それを生成せしめた実施
例より引用する。又、可逆性コンニヤクの呼
称は、例えば、40gのコンニヤク粉を1000c.c.
の水に膨潤させて生成させた可逆性コンニヤ
クの場合は4%可逆性コンニヤクと呼称す
る。
(4) 可逆性コンニヤクが関与して生成される目
的食品類の名称は次の呼称方法によつて呼称
する。
a 可逆性コンニヤクを食品とした場合添加
されたフレバー、類似食品食感の名称
b 可逆性コンニヤクを食品添加物とした場
合
被添加食品の名称
目的食品名は、冷時に於ける食品の状態、
温時に食用される食品の状態に上記a又はb
の名称を付す。
実施例 1(特許請求の範囲第1項)
コンニヤク粉1gに水1000c.c.を添加、一応膨潤
するまで30分間撹拌を行なつた後、12時間放置し
て安定したコンニヤク粉膨潤物とする。
該コンニヤク粉膨潤物に可逆性コンニヤク生成
の触媒としてクエンサンナトリウム5gを添加、
充分混合して、該コンニヤク粉膨潤物と触媒との
混合物を作る。
該混合物を加熱して、該混合物の品温を70℃〜
90℃以上に保ち、5時間加熱処理を行なつて反応
を終了、可逆性コンニヤクを収得する。
80℃に於ける状態 凝固 F

実施例 2
コンニヤク粉3gに水1000c.c.を添加、一応膨潤
するまで30分間撹拌を行なつた後、12時間放置し
て安定したコンニヤク粉膨潤物とする。
該コンニヤク粉膨潤物に可逆性コンニヤク生成
の触媒としてクエン酸ナトリウム5g、炭酸カル
シウム0.1gを添加、充分混合して該コンニヤク
粉膨潤物と触媒との混合物を作る。
該混合物を加熱して、該混合物の品温を80℃〜
95℃以上に保ち、2時間加熱処理を行なつて反応
を終了、可逆性コンニヤクを収得する。
