〔産業上の利用分野〕
この発明は、油揚類即ち、油揚、生揚げ、がん
もどきなど、豆腐または蛋白及び水の混練物から
調製される成形生地を素材とし油中加熱して製造
される製品の製造法にかかわり、特に改良された
色調のこれら製品を製造する方法に関するもので

2653号などにその提案が見られるが、これらはい
ずれも、成形生地を調製する前にアミノ酸と反応
しやすい糖類を加えることが行われ、生地中に分
散させて使用される。

とを見い出した。油揚類は、一般に所謂きつね色
と呼ばれる明るい黄金色が好まれ、このため、上
述の色調が白くなるような作用を防止しあるいは
改善しないと、生地表面の凝固剤処理による組織
及び食感改良効果を活かすことができない。そし
て、前述のような、生地中に糖類を加える方法で
は、色調を改善する効果に満足できる効果を得る
ことができなかつた。

凝固剤のカチオンが結合し不透明な性質をもつ膜
が形成されているのではないかと考え、表面にお
いて集中的に色調改善処理を行うことについて検
討し、成形生地にしてからこれを糖含有液と接触
させたところ、良好な色調の油揚製品を得ること
ができることを見いだした。即ち、この発明は、
油揚類用成形生地の表面をアミノ酸と反応する糖
を含有する液と接触させることを骨子とする油揚
類の製造法である。

る。アミノ酸と反応する糖としては、グルコー
ス、フラクトース、キシロース、マルトースなど
の還元性を示す糖を用い、好ましくは、水に溶解
または分散して使用する。これら糖類の使用量
は、糖の種類により異なり、各々実験的に容易に
定めることができるが、通常生地重量に対して
0.05〜0.5%付着するようにするのがよい。

ウム(二水塩)水溶液に5秒間浸漬し、引き上

ングし、水切りをしたのち油中加熱してガンモド
キを製造した。このものは、色調が鮮やかで良好
