Description

【発明の詳細な説明】[Detailed description of the invention]

本発明は炭素数8〜12の脂肪酸モノグリセライ
ドを含有する食品用保存料のもつ特有の呈味(収
れん味)を改善することを目的とするものであ
り、炭素数8〜12の脂肪酸モノグリセライドを含
有する食品用保存料と天然甘味物質を併用するこ
とにより、炭素数8〜12の脂肪酸モノグリセライ
ドを含有する食品用保存料の呈味を改善する方法
に関するものである。 現在、食品の保存性を向上させるために種々の
保存料や殺菌料が使用されているが、最近はこれ
らの保存料や殺菌料に対する規制が厳しくなつて
いるために、添加使用される食品の種類および添
加量が限定され、満足すべき効果をあげ得ないの
が現状である。 これに対して炭素数8〜12の脂肪酸モノグリセ
ライド、すなわちカプリル酸モノグリセライド、
カプリン酸モノグリセライド、ラウリン酸モノグ
リセライドがすぐれた静菌効果を有していること
が見い出され、これらの脂肪酸モノグリセライド
を含有する食品用保存料が開発されている。しか
し、これらの脂肪酸モノグリセライドを含有する
食品用保存料は、使用する脂肪酸モノグリセライ
ドのもつ特有の呈味(収れん味)のため、添加使
用する食品の種類が限定されるとか、目的とする
保存効果を発揮する添加量まで使用できないなど
の欠点を有している。 本発明者らは、これらの欠点を除き、炭素数8
〜12の脂肪酸モノグリセライドを含有する食品用
保存料をより巾広く利用するために検討を加えた
結果、炭素数8〜12の脂肪酸モノグリセライドを
含有する食品用保存料と天然甘味物質を併用する
ことにより、炭素数8〜12の脂肪酸モノグリセラ
イドを含有する食品用保存料のもつ特有の呈味を
改善することを見い出し、本発明を完成したもの
である。 本発明で用いられる天然甘味物質とは、ステビ
オサイドおよびステビオサイド含有物質、グリチ
ルリチンおよびグリチルリチン含有物質、フイロ
ズルチンおよびフイロズルチン含有物質、タウマ
チンおよびタウマチン含有物質をいい、いずれも
天然物より抽出等の手段により得られるものであ
る。すなわち、本発明におけるステビオサイドと
は、キク科植物のステビア・レバウデイアナ・ベ
ルトーニ(Stivia rebaudiana Bertioni)の葉に
含まれているステビオール骨格を有する配糖体を
いい、白色結晶で融点197〜8℃、砂糖の200〜
250倍の甘味をもち、次の構造を有するステビオ
サイドのほか、ステビオサイドのソホロース部分
にグルコースが更に1分子結合した構造で、 融点242〜4℃、砂糖の250〜300倍の甘味をもつ
レバウデイオサイドAを含むものである。また、
グリチルリチンはマメ科植物の甘草の根に含まれ
ている次の構造およびその塩類で あり、白色粉末で砂糖の約250倍の甘味をもつ甘
味物質である。また、フイロズルチンはアジサイ
属植物のアマチヤ葉に含まれている次の構造を有
する白色結晶で、砂糖の600〜800倍の甘味をもつ
甘味物質であり、タウマチンは 西アフリカに生育する植物(Thaumatococcus
daniellii Benth)の果実中に含まれ、砂糖の
2000〜3000倍の甘味をもつ蛋白質甘味料である。
これらの甘味物質はいずれも天然物からの抽出物
であるので、不純物を完全に除去し、前記のごと
き構造を有する純品として取得することは経済的
にも難しい点が多いので、本発明では前記の構造
を有する純品のみならず、これら甘味物質を含有
する抽出液、抽出エキス、粗結晶などの状態でも
使用することができる。 また、脂肪酸モノグリセライドは一般には乳化
剤として用いられている食品添加物であるが、近
年炭素数8〜12の脂肪酸モノグリセライドに静菌
効果があることが認められ保存料への開発が進め
られている。 本発明における食品とは、魚肉ねり製品類、蓄
肉製品類、ギヨーザやシユーマイなどの総菜類で
あり、従来はこれらの食品に対して添加する炭素
数8〜12の脂肪酸モノグリセライドの量は呈味の
点で0.03%程度が限度であつたが、本発明の方法
を用いることにより0.05〜0.08%まで添加量を増
加することができ、従つてよりすぐれた保存料と
しての効果を発揮できるようになつた。 本発明における天然甘味物質の食品に対する添
加量は、対象とする食品の種類や炭素数8〜12の
脂肪酸モノグリセライドの種類および使用量によ
り異なるが、単独で添加する場合は、ステビオサ
イド0.003〜0.03%、グリチルリチン0.004〜0.04
%、フイロズルチン0.002〜0.02%、タウマチン
0.0005〜0.005%(以上の天然甘味物質はいずれ
も純品換算)が好ましい添加量である。 以下、実施例により説明する。 なお各実施例における天然甘味物質の添加量は
純品換算で示す。 実施例 1 魚肉すり身1000gに食塩30g、砂糖10g、味淋
30ml、グルタミン酸ナトリウム10g、でん粉80g
および水400mlを配合した基本組成に、第1表記
載のカプリン酸モノグリセライドとステビオサイ
ドを添加し、常法により製造したケーシング詰め
かまぼこの呈味テストをパネル10名(男8名、女
2名)により行なつた。判定結果は第1表に示
す。
