Abstract

PURPOSE:To obtain the subject stably producible and preservable emulsion by containing respective specific amounts of a polyglycerol ester of condensed ricinoleic acid, sucrose ester of a fatty acid having >=3 average esterification degree and glycerol ester of a fatty acid with succinic acid as essential components. CONSTITUTION:A W/O type emulsion with a high moisture content containing >=60 to <100wt.% polyglycerol ester of condensed ricinoleic acid ester, >=30wt.% sucrose ester of a fatty acid having >=3 average esterification degree and <=30wt.% glycerol ester of a fatty acid with succinic acid as essential components is provided. If the blending ratio of the above-mentioned respective components is outside the afore-mentioned range, phase inversion or separation of water or oil occurs during preservation or water is not included. The above- mentioned emulsion is normally added in an amount of preferably 0.1-3%. The object of the afore-mentioned emulsion is preferably a W/O type emulsion containing edible fats and oils and water as main constituent substances and the ratio of W/O is preferably >=2 to <6.

上記問題点を解決するため、本発明に係る新規な高水分
含有油中水型乳化剤はポリグリセリン縮合リシノレイン
酸エステルを60重量%以上100重量%未満、平均エ
ステル化度3以上のショ糖脂肪酸エステルを30重量%
以下よびグリセリンコハク酪脂肪酸エステルを30重量
%以下を必須成分とすることを特徴とする高水分含有油
中水型乳化剤である。ここで上記各成分の配合割合は上
記3成分の合計を100%とし、3つの成分間をさすも
のである。 本発明に使用するポリグリセリン縮合リシノレイン酸エ
ステルはポリグリセリンと縮合リシノレイン酸とのエス
テル化物である。通常の場合グリセリン部分の平均重合
度は4〜6で、リシノレイン酸部分の平均縮合度は3〜
6のものとのエステル化物であって、その平均エステル
化度は1〜2である。 平均エステル化度3以上のショ糖脂肪酸エステルはショ
糖と脂肪酸とのエステル化物であり、その平均エステル
化度が3以上のものであることが必須である。 脂肪酸は構成する炭素数に特に限定を設けないが、炭素
数12〜22の脂肪酸が望ましく、飽和、不飽和または
、これらの混合物であってもかまわない。 クリセリンコハク酸脂肪酸エステルは七ノ・ジグリセラ
イドと、コハク酸とのエステル化物である。 長鎖脂肪酸は主にステアリン酸/パルミチン酸のものが

。 各成分の配合割合の範囲をはずれると、転相を起こした

抱き込まなかったりする。 また、本発明の乳化剤組成物の添加量は、特に限定を設
けるものではないが、通常0.1〜3%が適当である。 本発明の乳化剤の対象物は食用油脂と水とを主要構成物
とするW10型乳化物である。W2O比については特に
限定を設けるものではないが、2以上6未満が好ましい
。また、W2O比が2未満でも本発明による乳化剤組成
物は有効に働く。 ここに用いる食用油脂は、食用に供するものであれば、
何ら限定を設けるものではない。例えば天然の動植物油
脂単独あるいはこれらの任意の混合油、さらには水素添
加、分別、エステル交換等を施した加工油脂があげられ
る。

につき例示するが、勿論これらは説明用のものであって

製造した。次いで得られた上記乳化剤を用いて下記の方
法にてW10型乳化物を作製した。 綿実油10部、パーム油15部の油脂に、該乳化剤1部
を添加し、加熱溶解後、乳化機を用いて、75部の水を
徐々に添加して乳化し、その後急速冷却しながら混和し
油中水型乳化物を得る。 1−・ 6  び         l〜6製造例にて
作製した油中水型乳化物について乳化状態、安定性につ
いて以下の評価基準にて評価をし、その結果を表−2に
示す。 乳化状態O:滑らかな乳化状態 △:転相しないが、水を抱き込まな い ×:転相し、W10型乳化物できず 安定性 得られた油中水型乳化物を25°Cに保存し、
