Abstract

PURPOSE:To efficiently produce a fish-paste product of good quality by constructing a cavity from a pair of electrodes and a mold, placing sheet materials composed of moisture-permeable thin films and aluminum between the electrodes and a ground fish meat raw material and simultaneously carrying out forming and heating of the ground fish meat raw material. CONSTITUTION:Sheet materials 13 composed of moisture-permeable thin films and aluminum are placed between electrodes 9 and a mold 5 is sandwiched therebetween. In this state, a pasty ground fish meat raw material (M) is then filled from a nozzle 11 through a material injection hole 7 into a hollow part 6 of the mold 5. At this time, since liquids exuded from the ground fish meat raw material (M) are permeated through the moisture-permeable thin films thereof, the electrodes 9 and the ground fish meat raw material (M) attain an electrically conductive state through the liquids permeated through the aluminum and moisture-permeable thin films. Thereby, if a voltage is applied across the respective electrodes 9 to flow a current through the ground fish meat raw material (M), which is then heated. The current is subsequently stopped to mutually separate and retreat the electrodes 9 and run the sheet materials 13. The sheet materials are subsequently isolated from the mold 5 and peeled from the obtained formed product. Thereby, in this state, the formed product after completing the heating is taken out of the mold 5.

Conventional Techniques Pasted products such as Nhoko are usually made by grinding fish meat mixed with salt, adding auxiliary materials such as seasonings and starch, and shaping the resulting surimi material into a predetermined shape. It is made by heating the molded product to gel it, and then baking it if necessary. Among these manufacturing processes, the process of molding the surimi into a desired shape involves filling a mold with the surimi and pulling it out from the mold, or punching the surimi with a predetermined mold, and also involves a heating process. Methods such as external heating using steam or hot water, and internal heating using Joule heat caused by energization were adopted. Conventionally, in order to perform molding and heating at the same time, the method used was to fill an insulating cylinder with surimi, pressurize it with a pair of electrodes, mold it, and simultaneously apply electricity to heat the molded product using Joule heat. It is considered.

Problems to be Solved by the Invention In the method of externally heating molded surimi products, it is often difficult to sufficiently heat the inside of the molded product, and in such cases, so-called return rings occur and the product deteriorates. There is an inconvenience that the elasticity of the material is lost.

In addition, in the Joule heating method for molded products, in order to prevent deformation of the molded product due to contact of the electrode with the molded product, the molded product is placed in a moisture-permeable bag such as cellophane paper in advance.
A common method is to sandwich this between electrodes and energize and heat it. As a result, it is necessary to put the molded product into a bag and take it out of the bag after heating to give it a brown mark, which increases the number of man-hours and manpower, which leads to an increase in costs. there were.

However, when molding and heating are performed using electrodes, if the electrodes are brought into direct contact with the surimi, the surimi may adhere to the electrodes, damaging the shape of the molded product, or dirt may gradually accumulate on the electrodes. This causes problems such as adhesion to products. In order to prevent such inconveniences, it is conceivable to place the molded product in a moisture-permeable bag in advance and interpose moisture-permeable 1llF1 between the electrode and the molded product. Not only is it troublesome to take it in and out of the molded product, but the liquid seeping out from the molded product adheres to the electrode, and as the water evaporates, solid content gradually accumulates and becomes dirty, and as molding and heating are repeated. A problem arises in that the dirt adheres to the product. In order to prevent such problems, it may be possible to configure the electrical surface to be brushed at predetermined cycles, but brushing causes dirt to scatter around, resulting in a worsening of the working environment and the risk of particles adhering to the product. There is a high risk that the quality will deteriorate.

On the other hand, aluminum is interposed between the moisture permeable thin film and the electrode, and therefore the electrode and the molded product are electrically connected via the aluminum and the liquid that has permeated the moisture permeable S film. If current is applied between each electrode in this state,
Electric current flows through the material inside the mold, generating Joule heat and heating the molded product. After applying electricity for a predetermined period of time to perform heating, the current is stopped, and then the electrodes are separated from each other and retreated from the mold, and in this state, the sheet material is run, and the mold is moved in the same direction as the sheet material,
Thereafter, the sheet material is separated from the mold and peeled off from the molded product, and in this state, the heated molded product is removed from the mold.

Effects of the Invention As is clear from the above description, according to No. 81 of the present invention, since the pair of electrodes constitutes a part of the so-called cavity in which the raw material is formed, it is possible to form the raw material and utilize Joule heat. In addition, the sheet material interposed between the electrode and the material to be rubbed is made of moisture permeable aluminum and aluminum, and is run in each cycle. Since the new part is constantly brought into contact with the electrode and the raw material, it prevents the raw material from getting dirty or the electrode from getting dirty, and the product remains stable even after long periods of continuous operation. Since the quality is not impaired and, of course, there is no need to particularly clean or replace the electrodes, it is possible to obtain effects such as easier maintenance and management of the device.
