In this case, a large boiler is required, which increases equipment costs and requires additional installation space.

This steam range has a structure in which a steam generator is provided in the upper part of the food compartment. This steam generator has a heater installed inside a metal plate, a steam generation chamber and a steam generation path formed inside, and a large number of through holes drilled downward.

In particular, when baking bread and installing a steam generation chamber above the heat source, the floor of the steam generation chamber is at a high temperature, and when water is sprinkled, water droplets only become beads and do not turn into steam. Further, there is a problem that the hot water balls fall into the firing chamber and fall onto the objects to be fired.

Inside the steam generation chamber 2, on the opening 102 side of the electric oven 100, two steam generation tubes 3, 3a are provided in contact with the top plate 20 with a slight gap between them. , 3a is provided with a slight gap. Both ends of the steam generation tubes 3, 3a are airtightly and watertightly joined to the side wall 21 of the steam generation chamber 2 to prevent steam and water from leaking to the outside. Electric heaters 31, 31a are built into the steam generating tubes 3, 3a to heat the steam generating tubes 3, 3a.

A required number of water sprinkling holes 41 are bored on both sides of the water sprinkling pipe 4, and by injecting water into the water sprinkling pipe 4, water is injected into the steam generating pipes 3, 3a. A slight gap is provided between the water sprinkler pipe 4 and the bottom plate 22. The surfaces of the steam generating tubes 3, 3a may be smooth, but since they are heated by the electric heaters 31, 31a, the surfaces are at a high temperature, so that the water boils and becomes a hot water droplet. Therefore, fine irregularities are formed on the outer surfaces of the steam generating tubes 3, 3a to ensure sufficient vaporization of water, but it is preferable to wrap them with a wire mesh.

The steam generation chamber 2 is heated by the heat source, and the steam filter 6 generates high heat due to heat conduction, which further heats the steam passing through the vent 51 and prevents the hot water from passing through. Therefore, it is possible to sufficiently prevent hot water balls from flying out from the steam outlet 71.

It is installed vertically. A required number of steam jet holes 71 are bored in the circumferential surface of the lower part of the steam jet pipe 7. The steam ejection pipe 7 is elongated at the upper part of the oven 100 or below the firing heaters 1, 1a, 1b, 1c, and 1d to prevent steam from being applied thereto to prevent electrical leakage.

The amount of heat in the oven 100 can be kept constant by lowering the amounts of heat in the ovens b, 1c, and 1d. This operation is performed by interlocking the electric heaters 31, 31a and the firing heaters 1, 1a, 1b, 1c, 1d, but it is also possible to allow each to operate independently. 23 is a drain for overflow prevention, and 105 is a heat insulating material.

The firing heaters 1, 1a, 1b, 1c, and 1d below generate heat to fire the object to be fired and heat the steam generation chamber 2 to a high temperature. When the object to be fired requires steam, a changeover switch (not shown) is operated to turn on the electric heaters 31 and 31a to heat the steam generation tubes 3 and 3a. After that, open the valve (not shown) to inject water into the water sprinkling pipe 4, and
1 to the steam generating pipes 3 and 3a. The water sent to the steam generation chamber 2 becomes steam and is jetted into the oven 100 from the steam jet hole 71. The water becomes a bead on the floor of the steam generation chamber, but is vaporized by the steam filter 6, which is heated to a high temperature by heat conduction. Further, the steam passes through a steam filter 6 and is further heated, so that the object to be fired is fired to a desired quality.
