へと傾動させる。凝固用の型箱B内で豆乳を凝固
させて大きな豆腐を製造し、この箱型毎水面上方
の上昇位置にある昇降台2上に載置する。このと
き昇降台は後傾状態とし、上面が開口し、周囲が
側板にて取り囲まれて、その内前板が取外可能と
なつている型箱の前板(図示せず)を取り外して
も豆腐は突出しないようになつている。昇降シリ
ンダの操作にて昇降台を水面下すなわち凝固箱毎
豆腐も水面下に没するようにする。そして昇降台
を降下させて前傾状態にした後、型箱の内奥側面
と豆腐との間に薄い板状の押出板(図示省略)を
挿入し、この押出板を送出台側に向かつて移動さ
せると豆腐は水中で型箱内より押し出される。こ
のようにして凝固用の型箱内で直接凝固させたき
めの細かい豆腐を該箱より取り出す。しかしきめ
の粗い豆腐所謂本綿豆腐においては一旦凝固させ
た豆腐を破潰し、これを濾布を全内面に敷いた型
箱内に入れ加圧脱水し、破潰された豆腐片を再び
結合させ、生地のひきしまつた豆腐としている。
これは型箱内に前記豆腐片を充填し、蓋をしてか
ら加圧している。従つてこの型箱より木綿豆腐を
取り出すにはきめの細かい所謂絹こし豆腐の様に
型箱より押し出す方法では不可能である。このた
め閉蓋状態で型箱を上下反転して蓋を前記上昇し
た昇降台の上に載置してから型箱を取り除く。そ
の後送出台側に向かつて手で押し出す。この閉蓋
状態で型箱の上下反転する動作は作業者が型箱を
もつて手で行つてもよいが、前記昇降台に型箱を
閉蓋状態のまま昇降台側に押圧する手段を備え、
かつこの昇降台を上下反転させて自動的に行うよ
うにすることも可能である。従つてこの場合、昇
降台は昇降動作と反転動作を行えるように各種の
方式を採用するものである。そして、この昇降台
の降下位置の昇降台側部には送出台が配設され、
この豆腐の型箱内より押し出される方向と交わる
方向の水平方向に移動可能となつている。この送
出台3は送出方向後端側のみに垂直の側板31に
連設した断面L字形でガイドレール32に移動可
能に支持され、かつ昇降台降下状態にある型箱の
底板と同一水面位置になるようになつている。そ
してこの送出台3はそれに突設したハンドル33
を押したり引いたりして該台を移動させ、その移
動量は少なくとも型箱Bの幅以上とする。また型
