[産業上の利用分野] この発明は、煮沸に対し抵抗性のある肉様食品
素材の製造法に関する。 [従来の技術] 高温、高圧の環境下に置かれた脱脂大豆粕等の
植物性蛋白材料を急激に大気圧下に放出すること
により、該材料に肉様の組織を付与する技術はか

として各種の加工食品に応用されている。 この種の蛋白素材は、湯戻しすれば容易に可食
状態となるが、湯戻し後に長時間放置したり又は
調理の目的で長時間煮込んだりすると、過度に柔
くなり、肉様食感が低下するという共通の欠点が
ある。この欠点は、特に湯戻り性の良い扁平素材
において著しい。 以上の欠点を除くための一手段としては、既に
特開昭54−8738号公報に開示されているように、
蛋白素材をフライイングする手段が考えられる。
しかし同公報中記載されているように、油浴温度
がある程度高くなければ効果がなく、さりとて高
くすると焦げ臭を生じるようになる。しかもフラ
イイングは、必然的に油と水とのミストを発生し
て作業環境を著しく低下させるのみでなく、高温
により油の耐酸化性が低下し、油ちよう製品に有
害なエポキシドを生じさせる誘因となる。 [発明が解決しようとする課題] そこで本発明は、比較的低温の雰囲気内で、上
記肉様食品素材に、湯戻し後、長時間放置したり
又は長時間煮沸したりしても肉様食感を保持する
性質(≪耐煮性≫と呼ぶ)を付与することを目的
とする。

(1) 概要 本発明者らは、以上の課題を解決する手段に
把き種々研究を試みた結果、肉様食品素材
(屡々≪組織状蛋白≫と呼ばれる)を融解状態
のw/o型エマルジヨンを接触させることによ
り、望ましい耐煮性を付与できること、及びこ
の耐煮性は、特にこの方法による品質の改良
は、特にスリツト状のダイを経て大気圧下へ放
出された扁平な肉様素材において顕著であるこ
とを見出した。 以上の知見に基づき、本発明に係る耐煮性肉
様食品素材の製造法は、スリツト状のダイから
押し出すことにより得られる、吸水率(10倍量
の60℃温湯で3分間水和後、水切りした後の原
量に対する吸水倍率で示す)0.8〜2.0の大豆由
来の扁平な組織状蛋白を、融解状態のw/o型
エマルジヨンと接触させることを特徴とする。
以下、発明の構成に関連する諸事項につき分説
する。 (2) 素材蛋白 ここで素材蛋白としては、蛋白原料を加圧加
熱後、スリツト状のダイから大気圧下へ押し出
すことによつて得られる、吸水率(10倍量の60
℃の温湯で3分間水和後、水切りした後の原量
に対する吸水倍率で示す10倍量の60℃湯で3分
間水和後水切りをした吸水量の割合を示す)が
0.8〜2.0程度の吸水性を有する、扁平な組織状
蛋白が利用され、殊にフレーク状の外観を有す
るものが好ましい。所望により、本素材は調味
液等を用いて適宜味付けしたものであることが
できる。調味液中には、醤油、酒、味醂、シヨ
ウガ、ニンニク、ネギ、レモン、食塩、砂糖等
の調味料、コシヨウやシナモン等の香辛料、ビ
ーフエキス又はポークエキス等の肉エキス、そ
の他の呈味料が添加される。 (3) w/o型エマルジヨン w/o型エマルジヨンとしては、バターやマ
ーガリンが好適に利用されるが、勿論実質的に
常温下に固状のw/o型乳化物の性状を具備す
る限りこれらに限るものではない。 (4) 処理 処理は、上記(3)のエマルジヨンを融解させ、
これをスプレー、塗布又は浸漬等の手段を用い
て素材蛋白と接触させて行う。w/o型エマル
ジヨンの融解温度は低く、代表的なバターやマ
ーガリンの場合、50℃程度の低温で足りる。 [作用] 本発明によれば、後記実施例の示すように、煮
沸により型崩れ又は過度に軟化し易い扁平な肉様
食品素材に対し耐煮性を付与することができる。
このような組織安定性の生まれる理由の詳細は不
明であるが、想像するに、融液状のエマルジヨン
が、全体としては親水性である部分的に疎水性分
子を含む食品素材とよく馴染み、この結果、油脂
分子による皮膜が均一に素材組織を被覆するため
であろう。 とまれ本発明の方法によれば、耐煮性の乏しい
扁平組織状蛋白(肉様蛋白素材)を低温で耐煮化
することができるので、保存中の過酸化物の発生
を極減しうると共に作業環境の悪化を回避できる
という一石多鳥の効果が得られる。 [実施例] 以下実施例により本発明を更に詳しく説明す
る、例示は単に説明用のものであつて、発明の技
術範囲を限るものではない。 実施例 1 脱脂大豆120部、植物油1.7部及び水20部をスリ
ツト状ダイを先端に備えたエクストルーダーに供
給し、該先端部付近の圧力80〜100Kg/cm2(ゲー
ジ圧)、温度140℃程度となるような条件下に加
圧、加熱しながら押し出し、押出後、直ちに切
断、乾燥することにより、繊維状組織に富む扁平
なフレーク状蛋白素材を得た。乾燥前の素材は水
分17%、厚さ約3mm、大きさ20〜40m/m×20〜
50mm吸水率1.4であり、これを熱風乾燥したもの
は水分4.6%、吸水率1.7であつた。この扁平な素
材を原料として下記の諸方法によりサンプルを作
成した。 C:素材を60℃の湯で3分間湯戻し後、水切りし
たもの。 C―A:Cを醤油70部、酒9部、味醂17部、シヨ
ウガ汁4部、ニンニク0.2部より成る調味液に
短時間浸して味付けしたもの。 C―A―D:C―Aを熱風乾燥したもの。 C―A―D―M:C―A―Dを50℃に加熱して溶
解したマーガリンに数分漬け込んだ後、油切り
したもの:。 以上の各サンプルを沸騰水に入れて通常の料理
の平均時間である20分間煮込んで途中の変化をみ
た。下表―1は、各試料をテキスチユロメーター
(株式会社全研販売)を用い、プランジヤー8mm
