させて塩辛味増強効果を有する両分を活性炭に吸着させ
た後、適当な溶出液、例えば60%(容量/容量)のエ
チルアルコールを用いて脱着させればよい。なお、溶出
液はできる限り塩辛味増強効果を有する両分以外の不純
物が混入しないものが望ましい。このようにして得られ
た塩辛味増強効果を有する画分を含有する溶出液をその
まま塩辛味増強剤としてもよいし、濃縮等の操作を加え
て塩辛味増強剤としてもよい。特に、濃縮等の操作を加
えて塩辛味増強効果を有する画分の濃度を高くした方が
