【考案の詳細な説明】 (産業上の利用分野) 本考案は、絹ごし豆腐を製造するに際し、凝固
剤を豆乳液中に攬拌混合させる混合装置に関する
ものである。

(従来の技術) 近年、保存性が良くて多量生産が可能なパツク
詰の豆腐が普及しているが、従来からある木綿豆
腐や絹ごし豆腐も依然として食味の良さ等から大
いに賞味されている。しかし、これらの木綿豆腐
や絹ごし豆腐は、多量生産したり均質な製品を得
ることに難点があつた。特に絹ごし豆腐の場合に
は、きめが細かくて喉ごしの良い微細なゲル状の
製品を造るために、木綿豆腐に比べて凝固工程で
微妙な処理を必要とされている。

(考案が解決しようとする問題点) 前記した凝固処理では、豆乳液の温度が余り低
すぎると所定の固さに凝固されないこと。人手に
よる攬拌混合作業は、高度の熟練度がないと均質
のものが得られにくいと共に、作業能率が悪いの
で多量生産できない。また、前記攬拌混合作業を
単に電動回転翼で行つたとしても、攬拌時に生ず
る液面の泡立ちが凝固後に気泡として残つたり、
攬拌した部分が外部から流入した空気を混入して
凝固不良や凝固ムラになる等の問題が発生する。

にモータ5が固定状態で支持されている。該モー
タ5の回転軸には、カツプリング6を介して連動
軸7が連結されており、その先端側には撹拌翼8
が装着されている。この攬拌翼8は第2図で示す
ように、複数枚(実施例では4枚)の各翼が連動
軸7から外方へ放射状に突設されている。また、
攬拌翼8に隣接した上部には泡抑え部材9が装備
され、該泡抑え部材9は第3図で示すように、底
面が平坦な円錐形状で前記連動軸7と一体固着さ
れ、連動回転するよう構成されている。

翼8のみの構成では液面に泡が発生し、また攬拌
翼8に向けて外部より冷たい空気が流入するが、
これらの現象は隣接配備された泡抑え部材9によ
つて抑止される。そして所定時間の攬拌混合が完
了した後は、モータ5の回転が停止させると共
に、昇降台3を降下させて元の位置に復帰させ
