適度な湿度を加えつつ調理を行うことが採用されてきて

手段の通水量を制御することで、容易に調節することが
できるため、コストアップを抑制したオーブンを提供す
ることができる。また、食品は燃焼によって直接加熱さ
れるものではないため、食品が酸化されることによる劣
化がなく、食品自体の質を活かした料理に供することが
期待できる。このため、家庭用は勿論、蒸気の量を調節
することで種々の調理が可能であるので、業務用として
