可能な「生」の状態を保持したカント野菜製品を効率的
に得ることができる。

での長期保存後も、野菜本来の「生」の食感すなわちフ
レッシュ感、テクスチャーや色彩等を有する状態が維持
され、その商品価値は極めて高い。また、本発明のカッ
ト野菜の製造法は、食品衛生的な見地からみても安全な
方法であり、産業上の利用価値は高い。
