程度の水溶液が使用される。また、ヤーコンを搾汁ある
いは抽出する際、予め加熱処理することにより酵素を失
活させてもよく、搾汁液あるいは抽出液はそのまま粗フ
ラクトオリゴ糖液として利用することもできるが、活性
炭カラムクロマトグラフィー等で精製した後、利用する
こともできる。さらに精製を望む場合には、粗フラクト
