の品質で炒り葉した茶葉を得ることができる様にした炒

〈課題を解決する為の手段〉
本発明者は上記問題点を解決する為に、釜炒りてん茶工
程は、炒り蒸し工程が製品の価値を決定する最も重要な
工程であることがら、連続式炒り蒸し方法及び装置につ
いて研究を重ねた。そこで連続式炒り蒸し装置において
、生茶葉の水分の多い良質の茶葉でその水分を十分に活
用することにより、従来の蒸熱法によるてん茶と同程度
までの炒り蒸しをなるべく安定して取り出せないものが
と考え、同質の茶葉で加工し、双方を比較してみたとこ
ろ、嗜好の変わった良好な製品を得ることが出来た。し
かし、極度に水分の少ない原葉(列番)は多少青くさみ
のあることが判明した。そこで本発明では、炒り蒸し工
程における生茶葉を炒り釜で酸化酵素の失活を行う、生
葉投入・生ぼけ排出・炒り蒸し・葉振り・取り出しの各
工程において、生茶葉に含有されている水分を用いて大
気圧の飽和蒸気と共存させつつ炒り葉する際、炒り釜円
筒排気温度(90″C〜150℃)と、炒り蒸し胴温度
(150℃〜350″C〉と、生葉の投入量とを中心に

続的に発生する大気圧蒸気の排出温度を中心に設定し、
上記各々の計測部より検出される数値を制御することを

生ぼけ排出・炒り蒸し・葉振り・取り出しの各工程にお
いて、生茶葉に含有されている水分を用いて大気圧の飽
和蒸気と共存させつつ炒り葉する際に、炒り釜円筒の排
出温度を90℃〜150℃範囲内で計測し、それを主体
として上記各工程を制御することを特徴とする連続式炒
り蒸し方法。 2、生茶葉を炒り釜で酸化酵素の失活を行う生葉投入・
生ぼけ排出・炒り蒸し・茶振り・取り出しの各工程にお
いて、生茶葉に含有されている水分を用いて、大気圧の
飽和蒸気と共存させつつ炒り葉する際に、炒り蒸し胴温
度を150℃〜350℃範囲内で計測し、それを主体と
して上記各工程を制御することを特徴とする連続式炒り
蒸し方法。 3、生茶葉を炒り釜で酸化酵素の失活を行う生茶投入・
生ぼけ排出・炒り蒸し・葉振り・取り出しの各工程にお
いて、生茶葉に含有されている水分を用いて、大気圧の
飽和蒸気と共存させつつ炒り葉する際、生葉の投入量を
中心に計測し、上記各工程を制御することを特徴とする
炒り蒸し方法。 4、生茶葉を連続式円筒にて炒り葉する際、茶葉を炒り
蒸しする装置であって、炒り蒸し機本体と、生茶葉の炒
り蒸し胴内通過時間に関与する制御要素の少なくとも一
つを操作によって変える操作部と、炒り蒸し胴へ投入さ
れる茶葉の投入量と、炒り蒸し胴からの排出量との差を
計測する計測部と、炒り蒸し排出側より熱風を送気する
計測部と、炒り蒸し胴の加熱温度調整計測部と、生ぼけ
排出により連続的に発生する大気圧蒸気の排出温度を中
心に設定し、上記各々の計測部より検出される数値を制
御することを特徴とする釜炒り茶の連続式炒り蒸し装置
