本発明は食味の改善されたキャンディ及びその製造方法
に関し、更に詳しくは、原料にステビア甘味料を混入さ
せて菓子本体に均一微細なエアーを抱含させることによ
り噛食味を改善した低力ロリー,抗う蝕性のキャンディ
、更に高温処理に際して着色の少ない製品歩留まりの良

キャンディの製造方法は一般的に、蔗糖,果糖,ブドウ

れたキャンディはカロリーが高く、また、う蝕性に問題
が有り、最近では蔗糖など高カロリーな糖類の全部また
は一部に糖アルコールや低カロリー高甘味度の甘味料な
どを使用したキャンディも知られている(例えば特開昭
61−70945号)。また無水ラクチトールに砂糖に
対して100〜600倍の甘味度を有する合成高甘味度
甘味料と水とを加えて製造する甘味料が知られており(
例えば特開昭64−34261号)、更に製造工程中に
高温処理などによって発生する原料の変質を防止するた
めの特殊な装置(例えば特開昭61−185154号)
や、キャンディ製造時に混線に依って混入する気泡をキ
ャンディの品質低下をもたらすものとして減圧脱気する
キャンディの製造方法及び装置も公知である。(例えば

酸味料など通常のキャンディ製造の際に使用する副原料
を添加することは自由であるが、添加時としては主原料
を煮詰めた段階が好ましい。特に還元乳糖100重量部
に対して食物繊維を1〜10重量部混入すると柔軟性が
付与され、より歯切れの良好な「さくさく」シた噛食味
のキャンデを得ることが出来る。食物繊維には例えばC
MC,ポリデキス1・ロース,グルコマンナン,パルプ
フロックなどを使用することが出来る。また真空乾燥前
のキャンディの水分含有量を2〜7重量%望ましくは3
〜5重量%に調整することは、キャンディの完威時に於
ける水分残存量を0.5〜3重量%,望ましくばl〜2
重量%に仕上げるために最適な水分含有量である。キャ
ンディの水分残存量が0.5〜3重量%の範囲内番こ在
る場合は,歯応えの有る、「さくさく」シた噛食味のキ
ャンディが得られるが,該範囲より過小な場合は噛食味
が「がりがり」したものになり、過大な場合には「べた
べた」した噛食味のキャンディとなって所期の目的を達
