Description

【発明の詳細な説明】[Detailed description of the invention]

本発明は、新しい起泡性飲料、殊に常温で長く
保存でき、使用時、容器を振盪するだけで美味な
発泡性飲料となる非炭酸型の起泡性飲料に関す
る。 今日の食生活は、国民の食生活に対する認識の
変革と、食品加工技術及び流通手段の進歩・発展
に影響されて日々多様化している。この状態は、
本発明の対象である非炭酸型発泡食品の分野にお
いても例外ではなく、例えば、従来のアイスクリ
ームやシヤーベツトに加え、ババロア、ムース、
メレンゲなどの発泡性菓子乃至デザートが登場し
て来た。そして最近では、缶入りのミルクシエー
キ類似品も登場している。 しかしこれらの発泡製品は、例外なく冷凍乃至
冷蔵状態で保存される必要があるので、省エネル
ギーの見地では極めて不経済であるのみでなく、
他方では、その流通コストを高騰させる要因を内
蔵している。本発明は、非炭酸型起泡食品、特に
飲料の分野において、常温保存が可能で、飲用
時、容器を軽く振盪するだけで美味な起泡状態の
飲料となる新規な起泡性飲料を提供するのを目的
とする。 ところで、食品を保存する目的でこれを缶など
の容器中に入れ、蒸気滅菌を施す技術そのもの
は、既にナポレオン時代(19世紀の初頭)から知
られているが、個々の食品についてその物性を損
なうことなしに滅菌する技術は未だ充分に開発さ
れているとは言えない。特に本発明が対象とする
発泡飲料では、起泡という微妙な物理現象を利用
するため、加熱による物性への影響がどのような
ものであるかを事前に推定するのは殆ど不可能で
あると言つてよい。本発明は、このように従来未
知であつた起泡性飲料における滅菌の問題に挑戦
し、かつこれを解決しえたものである。 本発明の要点は無菌化された状態で耐熱性の容
器内に収容された起泡性の非炭酸型飲料に存す
る。この新規な飲料は、主原料として任意の飲料
成分、好ましくは牛乳、脱脂乳、濃縮乳、脱脂濃
縮乳、加糖煉乳、無糖煉乳、クリーム、発酵乳、
乳酸菌飲料、合成クリーム、合成乳、合成濃縮
乳、豆乳、又はこれらのもしくはその加糖品の粉
末などの乳製品又は類似品を含む。さらにこの飲
料は、副原料として、糖類その他の甘味料、起泡
剤、安定剤及び必要に応じ若干量のアルコールな
どを含有する。なお、上の乳製品又は類似品は、
所望により、オレンジ、モモ、ブドウ、アンズ、
グレープフルーツ、ミカンなどの生果汁又は粉末
により、一部又は全部置換されてもよい。 以上の組成において、起泡剤としては例えばダ
イズ蛋白、コムギ蛋白、ゼラチンもしくはカゼイ
ンナトリウム又はこれらの部分加水分解物などの
動植物起源の蛋白質又はその誘導体もしくは加工
品、カラギナン、フアーセレラン、アラビアガ
ム、グアガム、キサンタンガム、プルラン、ロー
カストビーンガム、ペクチン、微結晶セルロース
などの植物界起源の多糖類又はその誘導体、シヨ
糖脂肪酸エステル、ソルビタン脂肪酸エステル、
脂肪酸モノグリセリド、プロピレングリコール脂
肪酸エステルなどの非イオン系界面活性剤などが
単独で又は組合わせて適用される。 本発明の飲料は、耐熱性の容器内へ収容された
状態で加熱滅菌される。この滅菌の条件として
は、一切の微生物のみならずその芽胞をも死滅さ
せうる強力な条件であることが目的上重要であ
る。具体的には115℃、15分又はそれ以上の条件
であることが望ましく、本条件以下では望ましい
保存性が得られない。なお、例えば150℃、1〜
2秒の瞬間滅菌条件も、滅菌後の細菌管理が充分
であれば同様に用い得る。 本発明飲料を容れる耐熱性容器は、金属、ガラ
ス、セラミツク、プラスチツク等の任意の耐熱性
材料から作られた瓶、缶、袋などに収容される。
但し、実用的には、予め容器内で振盪、起泡させ
てから飲用するのが最も便利であるから、缶、透
明な瓶など、起泡状況を聴覚又は視覚を介して確
認できるような容器が好ましい。この見地で、金
属缶は内部の飲料の起泡完了を振盪音の消失によ
り聴覚的に、またガラス又はプラスチツクスの透
明な瓶は、同じく内部の起泡状況を直接視覚的
に、夫々覚知させるのでいずれも発明目的上有用
である。なお、容器内が予め全満状態ではたとい
振盪しても起泡が起こりにくく、かつ聴覚的に起
泡の完了を報知することもできないので、一般に
は、内容量を全容量に対し55〜94%の範囲に保つ
のが適当である。 以下、実験例を示して本発明の内容により詳細
に説明するが、例示は勿論説明用のものであつ
て、発明の技術的範囲の限定を意味するものでは
ない。 実験例 1 (起泡性の検討) 糖質10%及び全脂粉乳4%を含む水溶液に下表
