従来の技術とその問題点
ポテトチツプよりなるポテトスナツクを製造す
るには、従来は殆どすべてフライ処理によるもの

含油量が多くなり(大よそ30〜35%程度)今日の
需要者の大方の嗜好に適わなくなつているのみな
らず、油の経日的劣化による製品ヶ質低下が避け
られない上、カロリーの過剰摂取の因ともなり、

問題点を解決する手段
原料のポテトは、常法通り芽や傷の如きをトリ

発明の作用及び効果
この発明ではポテトの厚さを約1mm前後とした

済む。これはマイラード反応を起す成分が著しく
減少しているからである。また、薄片にしたため
蒸煮も容易・均一となり、つれて生地のアルフア
化も進んでいるため、フライ処理によらずとも小
さな泡径をもつた均一な膨化したものが得られ
る。これらの綜合により、本発明のものは色艶の
よい、歯ざわりのよい、多孔質でカロリーの低い

実施例
例 1
生じやがいもを水洗し、芽や傷などの不良部分
を取除いた。これをそのままスライサーで約1mm
の厚さに切断し、常温の水に約1時間浸漬した。
水から取出した薄片を金網に一枚づつ並べて蒸煮
機(オートクレーブ)に入れ蒸気圧0.1Kg/cm2で
約5分間蒸煮した。ついでこれを乾燥機に入れ90
〜95℃で約20分間乾燥し、水分約7%の乾燥生地
とした。これを袋に入れ密封し、常温下一夜放置
し、翌日、オーブンで200〜220℃、約20秒で焼成
した。これに砂糖、醤油、香辛料等よりなる調味
料をまぶしてポテトスナツクとした。得られたも
のはソフトな歯ざわりを有する美味なものであつ

分間乾燥し、水分約7%のものとした。乾燥した
ものはすぐに200〜220℃・約20分間で焼成し、ソ
フトなポテトスナツクを得た。まだ調味していな
いこのスナツクは、多少カールしており、白つぽ
い色調であり変色していなかつた。これを食して
みたところ、歯ざわりがソフトであり、ポテト特
有のえぐ味とか渋味もなくなつており、美味であ
