ふぐの調理において、剥いだ皮はとげのある厚
皮(表皮)と薄皮(裏皮)とに分け、薄皮はぬめ

いしお湯に通して食べ、食通の人には大変好まれ
ているものである。厚皮よりとげを取る作業は多
くの手間と高度の技術を要し、また刃先が摩めつ
し易いために研磨する回数も多いものである。そ
こで、出願人は誘導台車にふぐの厚皮を展開係止
して誘導台車の進行方向に対して直角方向に往復
動する切刃や或いは回転カツターとの組合せでと
げをカツトする装置や、回転ドラムに厚皮を展開
係止して回転カツターとの組合せでとげをカツト

作 用
本発明になるふぐ皮とげ取機33においては、
左右軸受板18,18の調整ボルト19,19を
緩めると共につまみ付調整ボルト26,26を左
回転させて少し上昇させ、左右軸受板18,18
を上方へスライドさせて切刃12の刃先13を回
転ドラム1の外周面より解離させておき、次にふ
ぐの厚皮34の尻部を凹溝2の前部壁面と押え板
4とで挾着して係止させた後に厚皮34を回転ド
ラム1の前面へ展着させるものである。そして、
回転ドラム1を手動で後方へ回転させて切刃12
の刃先13と厚皮34のとげを対応させてつまみ
付調整ボルト26,26を右回転させながら左右
軸受板18,18を下降調整し、刃先13の位置
を設定した後に調整ボルト19,19を締付けて
左右軸受板18,18を左右ガイド板16,16
に固締するものである。そこで、始動スイツチを
ONとなすと切刃用モータ22が高速回転すると
共にドラム用モータ11は低速回転し、切刃用モ
ータ22のクランク円板23の回転で連杆24を
介して支持棒15,15が左右に往復作動し、支
持棒15,15に固締した取付板14と共に切刃
12が高速で左右に往復作動するものであり、第
1図の矢印の様に回転ドラム1が低速で回転し、
回転ドラム1の外周面に展着した厚皮34は前部
押えローラ29で押圧された状態で切刃12の刃
先13が厚皮34の表面に接触しながら厚皮を上
面より0.1〜0.3mm位の厚さでとげと共にカツトし
てゆくものである。厚皮34は刃先13の前後位
置を前部押えローラ29と後部押えローラ32で
押圧されながら刃先13でカツトされるため、刃
先13が往復作動しても厚皮34が回転ドラム1
の表面よりずれることがなく、とげをカツトした
厚皮34が再び前部へ回転してきた時にスイツチ
をOFFとなして回転ドラム1並びに切刃12は
停止し、つまり付ナツト5,5を緩めてカツト終
了した厚皮を取外し、新しい厚皮を装着して再び

く、カツトする厚みも薄く、一定なし得るもので
あり、形状もコンパクトで搬送にも便利である
等、前記した様な顕著な諸効果を奏するものであ

る様になした回転ドラムと、刃先を回転ドラムの
回転方向に対向させると共に回転方向に対して直
角方向へ刃先を往復動させる往復誘導機構付の切
刃とを備え、該往復誘導機構付の切刃に刃先と回
転ドラムとの間隙を調整する上下調整機構を設
け、切刃の刃先が対向する回転ドラムの前後に回
転ドラムと接摺する押えローラを設けたことを特
