<産業上の利用分野>
本発明は離水等の少ない食感良好な無菌豆腐の
製造法に係るものである。
<従来の技術>
豆腐の凝固剤としてグルコノデルタラクトン
(以下GDLと称する)が開発されて以来、容器入
り豆腐の大量生産が可能となつた。この容器入り
豆腐は製造が容易であると同時に、ある程度の保
存性もあることから新しい流通形態を生みだし
た。
しかしながら従来の製造方法では大量生産は可
能であつても、長期間保存可能な無菌豆腐を製造
することは不可能であり、これを解決せんがた
め、常温でも長期保存可能な種々の無菌豆腐の製
造法が提案されている。
無菌豆腐の製造法は豆乳を殺菌した後無菌的に
操作する方法(無菌充てん豆腐)と、容器に充て
んした豆腐を最終的に凝固を兼ねて加圧加熱殺菌
処理(レトルト殺菌処理)する方法(レトルト豆
腐)の2つに大別されるが、操作性あるいは装置
コスト等の点において後者の方法が優れている。
ところが容器に充てんした豆乳をレトルト処理
すると、容器中で大量の離水が生じ、商品価値を
著しく低下させるという欠点があり、このため例
えば凝固剤と離水防止剤を添加混合し、加圧加熱
殺菌処理する方法(特開昭51−95152号)等も開
発されている。
しかしながら離水防止剤を添加しても離水防止
は完全とはいい難く、また離水防止剤の添加は食
品衛生上からも好ましいことではない。
<発明が解決しようとする問題点>
このような現状に鑑み、本発明者等は離水防止
剤等を用いなくとも離水が少なく、操作が簡単な
無菌豆腐の製造法につき研究の結果、容器に充て
ん密封した豆乳を、予め熱水又は蒸気により60〜
75℃で2〜10分間の加熱をしたのち、凝固を兼ね
てレトルト処理することにより、離水の少ない食
感良好な無菌豆腐が得られるという知見を得た。
無菌豆腐を得るためには最終的に120〜140℃、
40〜10分程度のレトルト処理を必要とするが、こ
の際に大量の離水が生じ、商品価値の高い無菌豆
腐を製造することはできなかつた。ところが驚く
べきことに、予め豆乳を60〜75℃に予備加熱し、
しかるのちレトルト処理することにより、離水の
少ない食感良好な無菌豆腐が得られたのである。
本発明によれば離水等の少ない商品価値の高い無
菌豆腐を簡単な操作で製造することができ、工業
的に非常に有利な方法である。
<問題点を解決するための手段>
以下本発明を具体的に説明する。
本発明に用いられる豆乳は通常の豆腐製造の際
に用いられる豆乳あるいは高温浸漬により大豆中
の可溶性糖分を除去した豆乳である。
例えば水浸漬した大豆を4〜6倍量の水で磨砕
して得られた呉を加熱煮沸し、おからを除いて得
られた豆乳、40〜60℃の温水に2〜3時間浸漬し
て大豆の可溶性糖分を除去し、この浸漬大豆を上
記と同様に処理して得た豆乳、あるいは市販の豆
腐用粉末豆乳を水に溶解し加熱して得られる豆乳
等である。
この様な豆乳に凝固剤として例えばGDLを0.2
〜0.3%添加混合し、適宜の容器例えばポリプロ
ピレン等耐熱性のある合成樹脂製の容器に充てん
密封する。尚凝固剤は他の公知の凝固剤例えば塩
化カルシウムと併用することも可能である。
こうして容器に充てん密封した豆乳を熱水又は
蒸気で60〜75℃、2分以上の予備加熱を行ない、
しかるのちレトルト処理して殺菌と同時に凝固せ
しめるのである。
予備加熱は60〜75℃、2分以上、好ましくは2
〜10分間の範囲で行なうことが必要であり、この
範囲外であると期待する効果が得られない。
この予備加熱の具体的方法は、例えば充てん豆
乳をレトルト装置内におき、80〜95℃の熱水ある
いは蒸気で5〜10分間加熱することにより行なう
ことができる。
ついで予備加熱した豆乳を、豆乳の凝固を兼ね
てレトルト処理する。処理条件は容器の形状容量
等によつても異なるが、120〜140℃、40〜10分の
加熱が必要である。そしてこのレトルト処理には
公知のレトルト殺菌機を用いることができる。
<発明の効果>
こうして得られた無菌豆腐は離水も少なく食感
良好でありかつ長期間常温で保存可能な豆腐であ
る。
以下予備加熱と離水量との関係を実験例によつ
て説明する。
実験例
通常の方法によつて得られた豆乳を、豆乳中の
固形物濃度が10.0%に、またGDLが0.25%になる
ように調整した。これらの豆乳を耐熱性容器(ラ
ミコンカツプ、東缶興業K.K.)に充てん密封し、
次いで以下の方法で豆腐を製造した。
試料1(対照方法)
充てん密封した豆乳をそのままレトルト殺菌機
(日阪製作所、RCS40RTG)を用いて、120℃、
40分のレトルト処理をした。
試料2(本発明方法)
充てん密封豆乳を、90℃の熱水に5分間浸漬し
て予備加熱し、ついで試料1と同様のレトルト処
理をした。
尚豆乳温度が60〜75℃にあつた時間は試料1が
50秒、試料2が3分であつた。
このようにして得られた豆乳についてその離水
率{(分離水量(ml)/豆腐重量(g))×100}を
測定したところ、第1表に示す結果を得た。

The relationship between preheating and the amount of water separation will be explained below using experimental examples. Experimental Example Soy milk obtained by a conventional method was adjusted so that the solid concentration in the soy milk was 10.0% and the GDL was 0.25%. 第1表に示す結果から明らかな様に、何らの前
処理もせず、そのままレトルト処理すると(試料
1)、豆腐重量に対して16%前後の離水が生じる。
この離水は容器入り豆腐の場合、非常に商品価値
を低下させるものであり、また豆腐自体のテクス
チヤーも好ましくないものであつた。
これに対し本発明方法による試料2の離水は試
料1の半分であり、しかもテクスチヤーのよいも
のであつた。
以下に実施例を示す。
実施例
丸大豆100Kgを300の水道水に18時間浸漬した
のち水切りし、400の水道水を加水しながら磨
砕し、得られた呉を100℃で5分間加熱したのち
濾過して豆乳を得た。
この豆乳の固形物濃度を10%に調整し、これに
凝固剤としてGDL0.25%を添加混合し、次いで耐
熱性のカツプ(64mm×64mm×32mm、ラミコンカツ
プ、東缶興業K.K.)に充てん密封し、これを無
圧の飽和水蒸気で5分間加熱し(豆乳温度が60℃
から75℃に上昇するに要した時間は2分30秒であ
つた)、次いでレトルト殺菌機(日阪製作所、
RCS40RTG)で120℃、40分のレトルト処理を行
