【発明の詳細な説明】[Detailed description of the invention]

<発明の目的> 産業上の利用分野 本発明は解凍時の飴被覆層の溶失が防止された
冷凍飴被覆食品に係り、詳しくは、解凍後であつ
ても、生のときの外観および食感と同等で表面の
飴被覆層が溶失することなくそのまま保持される
冷凍飴被覆食品に係る。 従来の技術 さつまいも、くり等の周囲を飴でからめた食
品、例えば、所謂大学いもや中華料理の各種飴煮
食品がある。 これらの飴でからめた食品の作り方は、大学い
もを例として説明すると、第2図に示すように適
当な大きさに切断したさつまいもを食用油で油
し、一方、砂糖に適当量の水を加えて中火で加熱
し全体が薄茶色に飴化した時、これに前記揚げた
てのさつまいもを一度に加えて手早く混ぜ合わ
せ、飴をいもの表面にからめることによつて作ら
れる。 このように大学いも等の飴被覆食品をつくると
きに、粘稠な薄茶色の飴を作ることならびに少量
の飴をいもの表面に均一に付着させることがきわ
めてむづかしく、このところが職人の技とも云わ
れている。 そこで、このところの改良技術として特公昭57
−29135号公報や特開昭55−165777号公報に提案
されている。 前者の特公昭57−29135号公報には所謂大学い
もの製造法が示され、この方法によると、例えば
ポリエチレン等の袋の中にいもとたれとを入れ、
この袋を振つていもにたれを均一にまぶすことが
迅速かつ確実に行なうことができる。 後者の特開昭55−165777号公報に示す食品は、
アルミニウム鍋内に、油で揚げたいもと、飴袋と
油袋とが収納されて成る即席食品であつて、この
即席食品は熱を加えるだけで家庭で賞味できるも
のである。 しかし、これらに提案されている食品はあくま
で即席食品であつて、日持ちが短かく、日持ちを
高めるために、凍結して冷凍食品とすると、品質
が劣化して好ましくない。 すなわち、飴で被覆された食品を凍結した冷凍
食品は、解凍する間に、食品の表面が低温のため
に空気中の水分がそこに凝縮する。この凝縮水に
よつて表面の飴が溶かされ、極端な場合には表面
の飴コーテイングが全く消失することもある。こ
のため、食品としての外観、味、食感が失なわ
れ、商品価値が損なわれる。 発明が解決しようとする問題点 本発明はこれらの問題点の解決を目的とし、具
体的には、解凍時の飴被覆層の溶解が防止でき、
生のときの食感、外観と同等な冷凍飴被覆食品を
提供する。 <発明の構成> 問題点を解決するための手段ならびにその作用 すなわち、本発明は、油した食品の周囲に、
澱粉糊を配合し主成分が砂糖からなる飴をからま
せて、飴と澱粉とから成る被覆層を形成し、これ
を凍結し一体化し、更に、前記飴の砂糖量に対す
る澱粉糊配合量を0.5〜3.0%にすることを特徴と
する。 以下、第1図に示す製造手段の一例を通じて、
本発明について説明すると、次の通りである。 なお、第1図は本発明に係る冷凍食品の一例の
製造工程を示す工程図である。 まず、本発明者等は、予め、油された食品の
表面に飴をまぶして食品をつくり、この食品を凍
結して冷凍食品を製造し、この冷凍食品の解凍時
における飴の溶解態様ならびにその防止対策につ
いて検討した。この結果、解凍時の飴の溶解防止
には、飴の粘性を上昇させると共に、凝固性を増
加させることが有効であることを知見し、この知
見事実にもとずいて本発明を完成した。 そこで、本発明では、食品の周囲にまぶすべき
飴の粘性や凝固性を高めるために、飴に澱粉糊を
配合することがきわめて有効であることに着目
し、なかでも、第1表に示す各種の糊材料を飴に
添加して、その効果を調べた。 このテストは、次の通りに行なつた。 まず、グラニユー糖100gを水60gに溶解し、
これを180℃まで加熱して薄茶色に着色した飴を
得て、この飴に、第1表に示す各種糊材料を配合
して、各種材料が配合された飴をつくつた。 一方、さつまいもは1Kgを乱切りにして150℃
で15分間油し、この油したさつまいもを熱い
状態で、各種材料が配合された飴中に入れて混合
し、この飴をからめたさつまいもをつくつた。こ
れをその後凍結して保存し、その後、常温で解凍
して3時間後の表面状況を観察した。 なお、キサンタンガム、乾燥卵白および大豆分
離蛋白は水に溶解させて使用し、他の材料はあら
かじめ水を加えて加熱してこれを糊化して使用し
た。

量は0.5〜3.0%、好ましくは1.0〜1.5%がよかつ
た。すなわち、0.5%以下の添加量では効果が無
く、解凍の間に表面の飴コーテイング層が溶解し
て一部が消失し、また、3.0%以上では粘性がい
ちぢるしく高くなり食品にからめにくくなる。 また、この澱粉糊の配合時に、加工適性がある
のは水溶液としての濃度15%位までであり、それ
以上になると粘度が大きく分散しにくくなるので
濃度は10〜15%程度が好ましい。 更に、澱粉糊の中で、コーンスターチおよび小
麦澱粉の各糊の効果が大きい理由は冷却によつて
凝固する力が他の澱粉糊よりも大きいためと思わ
れる。 以上、主として大学いもについて本発明の効果
を説明したが、その他中華料理にみられるやまい
も、れんこん、くり、ぎんなん等の飴煮の際にも
同様の効果が期待できる。 実施例 以下、実施例によつて更に説明する。 実施例 剥皮したさつまいも1Kgを乱切りにして食用油
中で150℃で15分油した。 一方、グラニユー糖100gに水60gを加え、180
℃まで加熱して飴とし、これに市販水飴10gおよ
び15%濃度の小麦の澱粉糊10gを加え、これを前
に油したさつまいもを加え、120℃程度で混合
し、さつまいもの表面に均一にからませた。これ
を冷却後、バラ凍結し包装して大学いもの冷凍食
品を得た。 以上のようにして作られた冷凍大学いもは、常
温で解凍することによつて飴が溶け出すこともな
く、凍結前の大学いもと同様の外観および食味で
あつた。 <発明の効果> 以上説明したように、本発明は、油した食品
の周囲に、澱粉糊を混合した飴をからませて被覆
層を形成し、これを凍結し一体化してなるもので
あつて、とくに、飴の原料の砂糖量に対して澱粉
糊は0.5〜3.0%配合する。従つて、解凍時に食品
の表面にからめた飴被覆層は高い粘性を持つと同
時に反対に凝固力が働き、溶け出すことが無く、
冷凍前の外観および食味を保持できる。更に、澱
粉糊配合量が適正範囲にあるため、からめるのが
きわめて容易である。 このところから、本発明によつて、従来実現で
きなかつた飴で被覆された冷凍食品を市場に提供
することができるようになつた。
