【産業上の利用分野】本発明は、食品工業において、切
断あるいは剥皮後、さらには、これを乾燥させることに
よって生じるリンゴの変色を防止するために使用する変

【従来の技術】リンゴは日常食生活にもっとも利用され
ている果物の一つである。例えば、外食産業において、
ステーキやハンバーグの付け合わせ、お子様ランチの飾
り、あるいはパフェなどのデザートに用いられているの
がその例である。このような外食産業でリンゴが使用さ
れる場合、従来はリンゴを切断、若しくは剥皮(以下の
記載において切断若しくは剥皮を合わせて単に剥皮とい
う)後の経時的に生じる変色を防ぐために、食塩水に一
度浸漬したものを冷蔵庫に保管し使用していた。しかし
、この方法では非常に手間がかかるため、最近、特に大
規模な外食産業や人手不足の企業では、専門業者に依頼
して剥皮したリンゴを購入し冷蔵保管して、これを必要
に応じて使用しているのが現状である。このように大量
に剥皮してリンゴを冷蔵保管した際問題になるのが、リ
ンゴの表面が時間経過とともに黄褐色や茶褐色になる「
変色」である。この変色は、リンゴの食品としてのイメ
ージを著しく損ない、商品としての価値を失う。また、
近年、食品のスナック化が盛んであり、リンゴはスナッ
クの食品材料としても大いに利用されている。この場合
も、大きな問題となるのが乾燥リンゴチップ表面の変色
(赤褐色、茶褐色化)である。乾燥リンゴチップは、皮
付きリンゴや皮剥きリンゴをさらに適当な大きさに切断
したものを水や食塩水に浸漬し、乾燥させるといった工
程で作られる。しかし、この時生じるリンゴチップ表面
の変色は、例えばリンゴの表面が空気に触れてから直ち
に食塩水に浸し乾燥工程に掛けて処理を行ったとしても
、避けることができなかった。この変色もやはり外見上
、著しく商品価値を低下させるため好ましくない。一般
にこのようにリンゴの表面が空気に触れることによって
生じる変色は、自身の持つポリフェノールオキシダーゼ
により、チロシンやクロロゲン酸などの基質が酸化され
ることに起因するといわれている。従って、この変色に
関する研究は古くから行われており、物理的、化学的な
解決方法がいろいろと提案されている。公知の物理的方
法としては、例えばブランチングとして知られる加熱す
ることにより酵素を失活させる方法や、特開昭61−2
5441号公報に記載されている容器内に脱酸素剤を入
れて封閉するか、又は容器内の酸素を窒素ガス、炭酸ガ
スなどに置換し低温で保存する方法がある。
この他、特開昭61−25442号公報による活性酸化
鉄、ハイドロサルファイト系、水酸化カルシウム系、又
は鉄系などの脱酸素剤を入れたビニル系、ビニリデン系
、オレフィン系、ナイロン系、ブタジエン系などの酸素
透過性の少ない容器を使用した方法や、特開昭62−1
22553号公報によるポリアクリル酸ナトリウム架橋
体、ポリビニルアルコールマレイン酸エステル系重合体
、澱粉アクリル酸グラフト重合体などの吸水性ポリマー
と活性炭を混合した鮮度保持剤を、果実などの生鮮食品
と共に塩化ビニルやポリエチレンシートで密閉包装する
ことを特徴とする、果物、野菜の鮮度保持方法などがあ
る。また、公知の化学的方法としては、例えば特開昭5
9−140832号公報に記載されているアンモニウム
みょうばん水溶液にて処理する方法や、特開昭60−4
