Description

【発明の詳細な説明】[Detailed description of the invention]

〔産業上の利用分野〕 本発明は炭酸ガスを含有するゼリーの製造法に
関し、詳しくは、炭酸ガスを均一に含有し、炭酸
ガス入りの飲料と同様な口あたりを有し、かつゼ
リーと同様の歯ごたえを有する炭酸ガス含有ゼリ
ーを大量に生産しうる方法に関する。 本発明の製品のゼリーは、これまでのゼリーの
用途に利用することができるだけでなく、炭酸ガ
スの清涼感により清涼飲料水と同様な用途に利用
することができるものである。また本発明は、簡
単な工程によつて炭酸ガス含有ゼリーを得ること
ができる点において、工場生産に利用することが
できる。 〔従来の背景および先行技術の説明〕 炭酸ガス入り飲料のような清涼感があり、ゼリ
ーの歯ごたえのある炭酸含有ゼリーは、最近の消
費者の好みの多様化に合致し、デザートの一種と
して好まれているが、未だ市販されるに到つてい
ない。それは、最終製品中の多量の炭酸ガスを均
一に分散含有させることが困難であり、また製造
工程中の炭酸ガスの逸散を防ぐことが難しいこと
によると考えられる。 これまでに、炭酸ガスを含有するゲル状製品の
製造については、いくつかの試みが提案されてい
る。 たとえば、ゲル化剤としてゼラチンを使用し、
ゼラチン溶液と炭酸含有水溶液とを低温において
混合し、密封し、冷却してゲル化する方法が提案
されているが(特開昭59−45837号公報)、この方
法では、原料混合時に炭酸ガスが逸散しやすく、
また最終製品中に充分な量の炭酸ガスを均一に分
散含有させることが難しいこと、およびゼラチン
は、カラギナンまたは寒天に比べて、ゼリーとし
ての食感が優れていないことの難点がある。 また低温においてゼラチン溶液に炭酸ガスを吹
き込み、密封した後、加熱し、冷却しながら振と
うし、ゲル化の直前に振とうを中止する方法が提
案されているが(特公昭54−22501号公報、特開
昭54−52761号公報)、この方法では、ゼラチンを
一定の温度、時間で冷却、固化することが難かし
いために、工業的生産が難かしいこと、およびゼ
ラチンのゼリーとしての食感が優れたものでない
ことなどに難点がある。 またゼル化剤溶液(寒天、ローカストビーンガ
ムとキサンタンガムの混合物)に炭酸ガスを吹き
込むか、または炭酸水を混合し、密封した後、加
熱し、冷却する方法が提案されているが(特開昭
54−52761号公報)、この方法では、ゲル化剤のゲ
ル化温度が高いので、ゲル化剤の混合温度を高く
しなければならず、このために炭酸ガスの含有量
が低下すること、および容器を密封後加熱するた
めに、炭酸ガスをゼリーの中に均一に分散させる
ことができないことに難点がある。 さらに炭酸塩系の原料液と酸性系の原料液を調
製し、いずれか一方を予めゲル化させ、他方を添
加し、密封した後、加熱して、ゲルを溶解し、さ
らに再度冷却して固化する方法も提案されている
が(特開昭56−102762号公報)、この方法は、工
程数が多い上に、最終製品中に炭酸ガスを封入す
ることが非常に難かしく、また炭酸ガス圧の低い
製品になりやすいという難点がある。 さらにまたゲル化剤溶液(ローカストビーンガ
ムとキサンタンガムの混合物等)を予めゲル化
し、それに炭酸ガスを吹き込むか、または炭酸水
を混合した後、直ちに密封し、加熱し、振とう
し、冷却して再度固化する方法が提案されている
が(特開昭50−69247号公報)、この方法も、前記
と同様に、最終製品のゲル化温度が高く、炭酸ガ
スをゲルの中に充分封入することが難かしく、製
品の炭酸含有量が低くなるという難点を避けるこ
とができない。 本発明者らは、これらの方法における難点を改
善し、簡単な工程で炭酸ガスを含有するゼリーを
製造することを企図して、研究を続け、この研究
において、ゲル化剤としてカラギナンを使用し、
カラギナンを、カラギナンのゲル化温度を上昇す
る塩類と組み合わせると、ゼリーの製造工程中の
炭酸ガスの逸散が少なく、製品中に炭酸ガスを良
好な状態で均一に分散することができることを知
見し、この知見に基づいて本発明に到達した。 〔発明の目的および発明の要約〕 本発明の目的は、炭酸ガスが均一に含有され、
清涼感、外観および口あたりのすぐれた炭酸ガス
含有ゼリーを提供することにあり、本発明のもう
一つの目的は、炭酸ガスを含有したゼリーを簡単
に製造する方法を提供することにある。 本発明は、ゲル化剤水溶液および炭酸ガス水溶
液を容器に充填し、容器を密封し、振とうした後
冷却してゲル化することからなる炭酸ガス含有ゼ
リーの製造において、(a)ゲル化剤として、カラギ
ナンを使用すること、および(b)カラギナンのゲル
化温度を上昇する塩を、炭酸ガス水溶液、または
炭酸ガス水溶液およびカラギナン水溶液の混合物
とともに容器に充填することを特徴とする炭酸ガ
ス含有ゼリーの製造法である。 本発明の炭酸ガス含有ゼリーの製造法におい
て、カラギナンのゲル化温度を上昇する塩は、カ
リウム塩、マグネシウム塩、カルシウム塩、アン
モニウム塩およびこれらの混合物からなる群より
選択されたものを使用することができ、カリウム
塩は、酒石酸水素カリウム、リン酸カリウム、重
合リン酸カリウム、硫酸カリウム、炭酸カリウ
ム、クエン酸カリウム、塩化カリウムおよびこれ
らの混合物からなる群より選択されたものを使用
することができ、マグネシウム塩は、塩化マグネ
シウム、硫酸マグネシウム、炭酸マグネシウムお
よびこれらの混合物からなる群より選択されたも

のゲル化温度よりも1〜10℃高い温度において容
器に充填することができる。またカラギナンのゲ
ル化温度を上昇する塩は、カラギナンに対して1
〜100%(重量)の割合の量において使用し、炭
酸ガス水溶液は、カラギナン水溶液1部(重量)
に対して0.2〜5部(重量)の割合の量において
使用することができる。さらにカラギナン水溶液
は、0.2〜3%(重量)のカラギナンを含む濃度
において使用することができる。 本発明において、充分な量の炭酸ガスが均一に
分散含有されていて、ゼリー本来の歯ざわりおよ
び食感を有し、さらに炭酸ガス特有の清涼感を有
する炭酸ガス含有ゼリーを簡単な工程操作により
製造することができる。 〔発明の具体的な説明〕 本発明で使用する炭酸ガスを含有する水溶液
は、飲料水、果汁、牛乳、豆乳、酒類、ホエー、
バターミルクあるいはこれらの混合物に、常法
(例えばカーボネーター)により炭酸ガスを加圧
溶解したものである。必要に応じて後述する塩
類、色素、香料等を加えることもできる。 カラギナンのゲル化温度を上昇する塩のカリウ
ム塩、カルシウム塩、マグネシウム塩およびアン
モニウム塩は炭酸ガスを含有する水溶液にあらか
じめ添加するか、又は炭酸ガスを含有する水溶液
及びカラギナン水溶液を容器に充填した後、粉末
あるいは溶液で添加することができる。いずれの
場合においてもカラギナン水溶液に直接塩類を添
加してはならない。それは塩類の添加により、カ
ラギナン水溶液のゲル化温度が上昇するために炭
酸ガスを含有する水溶液と均一混合するには、全
体の温度を高くしなければならず、炭酸ガスが逸
散するからである。塩類を含有している牛乳、果
汁、豆乳等ではカラギナンをゲル化するのに必要
な量の塩類を補充するか又は全く塩類を補充せず
とも充分ゲル化可能な場合もあり、使用する果
汁、牛乳、豆乳等の量によつて異なる。飲料水を
用いた場合には塩類を必ず添加しなければならな
い。 カラギナンのゲル化温度を上昇する塩として、
使用することのできる塩類は、カリウム塩では例
えば、酒石酸水素カリウム、リン酸カリウム、重
合リン酸カリウム、硫酸カリウム、炭酸カリウ
ム、クエン酸カリウム、塩化カリウム等、カルシ
ウム塩では例えば、クエン酸カルシウム、乳酸カ
ルシウム、グルコン酸カルシウム、リン酸カルシ
ウム、硫酸カルシウム、塩化カルシウム等、アン
モニウム塩では例えば、硫酸アンモニウム、リン
酸アンモニウム、炭酸アンモニウム、アンモニウ
ム明ばん等、マグネシウム塩では例えば、塩化マ
グネシウム、硫酸マグネシウム、炭酸マグネシウ
ム、等である。 カラギナンには、周知のように、カツパ型、ラ
ムダー型、アイオタ型の3種が存在するが、本発
明で使用することのできるのは市販のカツパ型及
び/又はアイオタ型であり、ゲル化しないラムダ
ー型は使用することができない。 次に本発明の方法について詳述する。 本発明の方法においては、製造工程中の原料液
の温度が重要であるから先ずその点について説明
する。 水中の炭酸ガス溶存量は低温であるほど多い
が、あまり低温であると、カラギナン水溶液との
混合時に、直ちにゲル化を生じ、密封、振とう、
冷却後に、十分なゲル強度が得られない。またあ
まり高温であると上記の如きゲル強度の低下はな
いが、今度は炭酸ガス溶存量が減少するため望ま
しくない。従つて炭酸ガスを含有する水は10〜25
℃に保持することが望ましい。 次にカラギナン水溶液であるが、上記と同様に
あまり低温の場合炭酸ガスを含有する水溶液との
混合時に、早期にゲル化を生じ、又あまり高温で
あると炭酸ガスが逸散し、望ましくない。カラギ
ナン水溶液は炭酸ガスを含有する水溶液と混合し
た時、その混合液がカラギナンのゲル化温度より
1〜10℃高い温度に保持することが望ましい。 次に製造の態様について説明する。 まず必要に応じ塩類、色素、香料等を添加した
水、牛乳、果汁、豆乳等を常法により殺菌し、5
℃以下に冷却し、常法により炭酸ガスを吹き込み
10〜25℃、望ましくは15〜20℃に保持する。尚塩
類を添加する場合、カラギナン水溶液と炭酸ガス
を含有する水溶液とを容器に充填した後に水溶液
または固形で添加してもよい。塩類の量はカラギ
ナンの重量の1〜100%(重量)であり、塩類を
包含する牛乳、豆乳等を用いる場合は、添加する
必要がないかまたは上記の量に適合するよう補充
することもある。 次にカツパおよび/またはアイオタカラギナン
の水溶液を調製する。カラギナンの量は所望のゼ
リーの食感により適宜決定されるが、通常0.2〜
3%(重量)の範囲である。所定量のカラギナン
を水、牛乳、果汁、豆乳等に溶解する。このカラ
ギナン水溶液を常法により殺菌し、その後炭酸ガ
スを含有する水溶液と混合した時との混合溶液が
ゲル化温度より1〜10℃高くなる温度に冷却して
保持する。例えばカラギナン水溶液と炭酸ガスを
含有する水溶液とを1:1(重量比。以下同じ)
で混合する場合、混合溶液のゲル化温度が25℃と
すれば、カラギナン水溶液を45℃に保持する。カ
ラギナン水溶液を保持する温度は、炭酸ガスを含
有する水溶液の量および温度、カラギナン水溶液
の量、使用するカラギナンの量および性状、塩類
の量等により変動するので、本発明の方法を実施
する前に予め試験を行なつて決定するのが望まし
い。なお必要に応じてカラギナン水溶液に甘味料
として砂糖等を添加してもよい。 本発明に使用する耐圧性を有し、かつ密封可能
な容器は、例えば炭酸飲料用250ml容缶等であり、
少なくとも3Kg/cm2の圧力によつて変形せず、か
つこの圧力で内部の炭酸ガスがリークしない密封
性を有しているものである。 この容器にカラギナン水溶液及び炭酸ガスを含
有する水溶液を常法により充填するが、これらの
充填順序は問わず、予め混合してから充填しても
よい。炭酸ガスを含有する水溶液に塩類が含まれ
ていない場合はこのときに添加する。その後容器
を密封し、振とうし、原料液を均一に混合し、ゲ
ル化温度以下に冷却し、内容物を固化する。 次に試験例を示して本発明の方法を更に詳述す
る。 試験例 1 炭酸ガス含有ゼリーにおけるゲル化剤と製品の
食感の関係について試験を行なつた。 (1) 炭酸ガス含有ゼリーの調製 (1‐1) カツパカラギナンをゲル化剤とする炭酸ガ
ス含有ゼリー カツパカラギナンを水に溶解して、1.0%
水溶液を調製し、95℃において10分間加熱殺
菌した後、35℃に保持した。 これとは別に塩化カリウムおよび乳酸カル
シウムを水に溶解し、その合計濃度が0.3%
の塩類水溶液を調製し、95℃において10分間
加熱殺菌した後、5℃に冷却した。この塩類
水溶液をカーボネーターに入れ、炭酸ガスを
吹き込み、20℃に加温した後、このソーダ水
と先い調製したカツパカラギナン水溶液を
1:1の重量比において、250ml容の耐圧、
密封可能容器に充填し、容器を密封し、振と
うした後、直ちに10℃に冷却して、カツパカ
ラギナンをゲル化剤とし、炭酸ガス含有ゼリ
ーを調製した。 (1‐2) 寒天をゲル化剤とする炭酸ガス含有ゼリー ゲル化剤として寒天を使用し、寒天水溶液
を65℃の温度に保持したこと以外は、(1−
1)と同様にして、寒天をゲル化剤とし、炭
酸ガス含有ゼリーを調製した。 (1‐3) ゼラチンをゲル化剤とする炭酸ガス含有ゼ
リー ゲル化剤として、ゼラチンを使用し、ゼラ
チン水溶液を25℃の温度に保持したこと以外
は(1−1)と同様にして、ゼラチンをゲル
化剤とし、炭酸ガス含有ゼリーを調製した。 (1‐4) ローカストビーンガムとキサンタンガムの
混合物をゲル化剤とする炭酸ガス含有ゼリー ゲル化剤として、ローカストビーンガムと
キサンタンガムの混合物を使用し、ローカス

ガス含有ゼリー100g中に容存炭酸ガス量とし
た。 その結果は第1表に示すとおりであつた。 (3) ゼリーの官能試験 炭酸ガス含有ゼリーを男10名、女10名計20名
からなるパネラーに喫食させ、各パネラーに次
の5段階の評価をさせ、20名のパネラーの評価

あつた。 (3‐1) 炭酸感の評価 喫食したときの炭酸の感じ方の強弱を表現

[Scope of Claims] 1. In the production of a carbon dioxide-containing jelly, which comprises filling a container with an aqueous gelling agent solution and an aqueous carbon dioxide solution, sealing the container, shaking, and then cooling and gelling, (a ) using an aqueous carrageenan solution as the gelling agent aqueous solution, and (b) filling a container with a salt that increases the gelling temperature of carrageenan together with an aqueous carbon dioxide solution or a mixed solution of an aqueous carbon dioxide solution and an aqueous carrageenan solution.
