は確かに効果が期待できるが、脱酸素材の封入のための
装置を必要とするなど不便な点もある。このように、焼
き菓子類の風味保持は技術的に非常に困難な課題であっ

%以上混合時に加えることにより、後は常法に従い成形
し、焼成もしくはフライするなどして焼き菓子を製造す
るものである。トレハロースは粉体のまま他原料に混合

焼成したもので比較的甘味の少ない塩味と脂肪の多い焼
き菓子のことである。パイ類とは小麦粉、糖類、食用油
脂及び食塩を原料とし、必要により乳製品、卵製品、イ

部分と油脂とが交互に層状になるように焼成したもので
