2軸エクストルーダーに供給して、少なくともグルコマ
ンナン粒子が遊離する程度にまで組織を破壊し、次いで
水の存在下で混合撹拌を行なって所望の程度にまでグル
コマンナン粒子の水和を行ないゾルを形成させ、これと
同時に又はこの後アルカリ物質を該ゾルに加えて分散さ
せ、該2軸エクストルーダーの出口から取り出し、得ら
れるスラリーからゲルを形成することを特徴とするこん
にゃく芋からマンナンゲルを製造する新しい方法。 2、前記こんにゃく芋が生こんにゃく芋である請求項1
に記載の方法。 3、前記こんにゃく芋が煮沸されたこんにゃく芋である
