Description
<産業上の利用分野>
本発明は、業務用、家庭用を含むお好み焼に利
用する冷凍用の皮を製造する装置に関する。
<従来の技術>
お好み焼は、お好み焼を料理するに際して、ま
ず小麦粉や水等の皮の原材料を鉄板の上に敷き広
げ、その上からタコ、キヤベツ、ソボロ等の魚菜
類を入れて後、その上からさらに皮になる原材料
を上から掛け、表裏を返して焼き上げていること
は広く知られている。したがつて、このお好み焼
の料理は、その場で焼いて食べる楽しさから料理
の途中で皮を製造し、完成後直ちに食されてい
た。
<発明が解決しようとする問題点>
本発明は、最近の冷凍食品ブームに着眼したも
のであり、業務用はもとより家庭用においても、
お好み焼の調理を簡単にし、かつ冷凍保存を可能
に量産できるようにしたお好み焼の皮の製造装置
を提供せんとする。本発明の他の目的は、定量的
に規格化されたプロフエツシヨナルな味のお好み
焼の皮を製造する装置を提供せんとする。本発明
装置の更に他の目的は、お好み焼の皮のみを器械
により予め連続的に量産できるようにする装置を
提供せんとする。
<問題点を解決するための手段>
本発明は、上記目的に鑑みてなされたものであ
り、その要旨とするところは、小麦粉と水などの
お好み焼の皮の原材料を所定割合で投入して蒸気
により蒸練する蒸練機と、該蒸練機で蒸練したお
好み焼の生地を混練する混練機と、該混練機から
の生地をエアーで皺を取りながら平板状に圧延す
る圧延機と、該圧延機により圧延した生地を所定
形状に打ち抜く打抜機とからなるお好み焼の皮の
製造装置にある。
<作用>
本発明装置は、お好み焼として専門家の味を保
持するように小麦粉、水、卵、塩及び調味料の原
材料を蒸練機の蒸気によつて練り合せ、混練機で
混練したものを、圧延機によつて皺を取りながら
平板状に圧延し、これを円盤形に打ち抜いて計量
的に袋へ収納していくものである。
<実施例>
本発明装置の実施例を添付図面により説明す
る。第1図は本発明装置の全体概略図、第2図は
第1図中の圧延機における概略説明図、第3図は
第2図の平面図、第4図は、上記装置を用いたお
好み焼の皮の製造手順を示すフローチヤートであ
る。
第1図乃至第3図において、蒸練機1は原料投
入用の本体2と、該本体上方の上蓋3及び前記蒸
練したお好み焼の生地取出用の下蓋4とからな
り、この本体2は架台15上において、ボイラー
6とパイプ7で連結しており、電源スイツチと制
御盤5によつて蒸気圧下で蒸練するようにしてい
る。また、前記下蓋4の下方には回転可能なピツ
チcmのスクリユーをシリンダに内設している混練
機8を設置して、前記蒸練機1で蒸練された生地
を混練するようにしている。ついで、混練機8の
下方には無端ベルトコンベアと矢印の方に移動す
る作業台9上に上部にホツパー11と該ホツパー
11の直下の本体内に相対向する2組の上下ロー
ラー12,13を直列状に配設した圧延機10を
備え、この圧延機10においてホツパー11から
の生地を各ローラー12間で圧延するようにして
いる。また、圧延機10内の前記上下ローラー1
2,13間には、コンプレツサー14からの圧縮
空気を導いて皺取機21のノズルからの圧縮空気
により一対の上ロールで平板状にした生地の皺を
延ばすようにしている。さらに前記圧延機10に
おけるベルトコンベア22上の前後には澱粉を散
布する2台の散布機があり、このうち前方の散布
機16は圧延機10で圧延してきた平板状の生地
の下面にベルトコンベア22で移行するように
し、後方の散布機18は生地の上面に散布される
ようになつている。なお、刷毛均し17,19は
それぞれ前方の散布機16と後方の散布機18で
散布した澱粉を均すようにしている。後方の散布
機18の後方刷毛均しの次には打抜機20を配置
しており、これは平板状で表裏に澱粉が付着した
生地を、複数の円盤形に打ち抜くようにローラー
に打ち抜き刃を形成している。このようにして、
所定の厚さと大きさで打ち抜かれたお好み焼の皮
を連続して打ち抜きし、計量して袋中に収納後、
冷蔵・冷却して保存を図るようにしている。
次に、上記構成からなる本発明装置を使用した
お好み焼の皮の製造方法を説明する。

ものは、次の工程である混練機8に生地を投入し
てからスイツチをONにして(ST−10)、混練機
のスクリユーを稼動することにより全部の生地を
混練し(ST−11)、混練後にスイツチをOFFに
する(ST−12)。この混練工程は10〜12回繰り返
される(ST−13)。
混練した生地は、混練機8下方に設置した圧延
機10のホツパー11に入れる(ST−14)。この
時生地にはアルコールで濡らした布巾を被せるこ
とにより生地内の水分の蒸発を防止する。つい
で、圧延機10のスイツチをONにすると共に
(ST−15)、圧延機10の前後の散布機16,1

重量%を散布して刷毛均し19により均すように

によつてお好み焼の皮として打ち抜かれた以降の
計量チエツクや品質調整を行うようにしている。
また本発明装置は蒸練機、混練機、圧延機及び打
抜機を順に系統的に組み合せることにより、調理
時に手数の掛らない品質均一なお好み焼の皮を得
