安全、無害で公害を伴わないことから、該液化炭
酸を用いることにより天然香気成分含有物から容
易に着香炭酸氷を得ることができ、該着香炭酸氷
を用いて品質の良好な着香炭酸飲料及び耐圧性容
器入り着香炭酸飲料を容易に提供することができ
ることを知見し本発明の完成に至つたものであ
る。

耐圧密閉型に改造した定量凍結製氷機の製氷部分
に上記炭酸水を徐々に供給し、2時間運転し1塊
が25gの焙炒コーヒー香気成分含有炭酸氷26個を
製造した。容量200mlの耐圧缶内に該炭酸氷1個
とクエン酸0.2gを溶解してある精度12°の糖液
170gとを収容し直ちにシーマーで密閉し耐圧缶
入り炭酸コーヒー飲料を得た。この炭酸飲料はコ
ーヒーの焙炒香気成分及び耐圧缶の2.5倍容量の
炭酸ガス(液温5℃で絶対圧1.8Kg/cm2)を含有
し、市販の類似製品に比し風味及び炭酸ガス内圧
について遜色のないすぐれた品質のものであつ
た。

抽出終了後、得られた着香液化炭酸20gを、予め
水500gを収容し、5℃に保つた耐圧型凍結器内
に直結で徐々に導き、温度5℃に保つて撹拌しな
がら60分で炭酸ガスと香気成分とを水に吸収させ
た後、該耐圧型凍結器全体をブラインを収容した
ブライン槽に浸漬し、−40℃以下に急速凍結し、
その状態で5時間保つた後に該耐圧型凍結器内の
圧力を常圧に戻し、ライム香気成分を含有する炭
酸氷約500gを得た。この炭酸氷をアイスピツク
で小塊に粉砕してその70gを予め調製しジヨツキ
中に収容した糖度2°の糖液350ml中に投入し、焼
ちゆう100mlを加えて撹拌すると香味の優れたチ
ユーライムが得られた。
