Description

【発明の詳細な説明】[Detailed description of the invention]

<産業上の利用分野> 本発明は加水してバツターとした時に適当な粘
度を有して均一なクリーム状をなし、且つ揚げ物
を調理した時に、種(畜肉類、魚肉類、野菜類、
コロツケ類等)と衣との結着性がきわめて良好な
揚げ物用衣材に関するものである。 <従来の技術> 従来揚げ物用衣材としては、グルテンの少ない
小麦粉を主体とし、食感を改善する目的で各種の
蛋白質類、澱粉質類、乳化剤、卵及び重曹などを
添加し、又、必要に応じてこれにバツターとして
の適当な粘度を与える目的で、天然ガム類、増粘
剤等を加えた後、適量の水を加えてバツターとし
ている。 しかしながら、小麦粉を主体とした従来の衣材
では加水した場合、いわゆるママ粉状の固まりが
発生したりしてバツターとして適度の粘度(40%
濃度にてクリーム状になるごとくの)を得る事は
難しく、更に適当な粘度になつた後も経時的に固
形分が沈澱するような現象が発生し、バツターと
して適当で無い状態となる欠点があつた。又調理
した場合には種と衣との結着性が悪く、種と衣と
が剥がれ易い事により商品として見た目も悪く、
商品価値を著しく損なう等の問題が発生してい
た。この点を解決するため従来から種々の技術が
提案されている。すなわち、小麦粉に5〜20重量
%のライ麦を添加し、バツターとして好適な粘度
を保有するようにする技術(特開昭54−84042)、
DE5〜20程度に酵素糖化したワキシーコーンスタ
ーチを、衣用原料に対し10〜40重量%添加して、
油で揚げた際の種と衣との分離を防止する技術
(特開昭55−85376)等が提案されている。 <発明が解決しようとする問題点> しかしながら、これらの技術に因つてもそれぞ
れ一長一短があり、バツターとして必要な粘度を
維持することと、種と衣との結着性を改善する事
との両方を満足させ得るものではなかつた。 本発明者は、この点を改善するために小麦粉を
主体とする従来の衣材に代えて、特定のスラリー
粘度を有する油脂加工澱粉からなる衣材を開発
し、先に特許出願(特願昭60−125069号(特開昭
61−285956号))を行つた。この技術によれば、
上記従来技術の問題点は解決されたが、未だ食感
の点で不満足であつた。即ち、衣材の種に付けて
油で揚げた場合に、揚げ物の衣が固いという問題
である。これは、トンカツ等のように比較的固い
種を用いた場合にはそれほど目立つ問題ではない
が、クリームコロツケ等のように軟らかい種を用
いた場合には、口の中で衣がバサつき衣と種とが
別々の食感を与え、衣と種とが揮然一体となるよ
うな食感が得られないという問題が発生する。 本発明は、加水してバツターにした場合にはク
リーム状で適度の粘度を有すると共に、調理した
場合種との結着性が良好で、しかも揚げ物とした
場合の食感が軟らかくて良好である揚げ物用衣材
を提供する事を目的とする。 <問題点を解決するための手段> 本発明者は、上記目的を達成するために鋭意研
究を重ねた結果、糯種澱粉単独、又は糯種澱粉と
粳種澱粉との混合物を出発原料とした油脂加工澱
粉からなる衣材は、粳種澱粉単独を出発原料とし
た油脂加工澱粉からなる衣材と比べ、食感が著し
く改善されることを知見した。 かかる知見に基づく本発明の構成は、粳種澱粉
と糯種澱粉との混合物又は糯種澱粉単独に食用油
脂あるいはその類縁物質を添加・処理して得ら
れ、且つ40重量%濃度のスラリー粘度が200cp以
上である油脂加工澱粉を含有することを特徴とす
る。 次に本発明の構成について説明する。まず、糯
種澱粉としては、ワキシーコーンスターチ、モチ
米より得られた澱粉が挙げられ、また粳種澱粉と
してはトウモロコシ澱粉、小麦澱粉等の地上澱
粉、甘藷澱粉、馬玲薯澱粉、タピオカ澱粉等の地
下澱粉が挙げられるが、本発明においては、これ
らのいずれも使用することができ、又、これら原
料澱粉を次亜塩素酸ナトリウム等を用いて弱く酸
化させたものや、湿熱処理したものの様に、食品
向けに加工した澱粉、あるいは澱粉が糊化しない
温度範囲に於いて、アミラーゼ処理を行なつた酵
素処理澱粉等も有効に用いる事ができる。 本発明においては、油脂加工澱粉の出発原料と
して上記糯種澱粉を単独であるいは粳種澱粉と併
用して使用する。ここで、糯種澱粉は、粳種澱粉
と併用する場合、混合物中5%以上、好ましくは
10%以上用いるのが望ましい。これは、5%未満
では糯種澱粉を添加したことによる食感の改善効
果が不十分であるからである。一方、糯種澱粉の
使用割合を増やした場合、多ければ多いほど食感
が改善されて軟らかくなる。しかし、70%を超え
て糯種澱粉の使用割合を増加させても効果に大き
な差が出ず、また糯種澱粉が粳種澱粉に比べて高
価であるので、70%以下で使用するのが経済的で
ある。 以上のような澱粉を出発原料とする油脂加工澱
粉は、澱粉に食用油脂及びその類縁物質を0.005
%〜10%、好ましくは0.01%〜1.0%添加し、均
一になる様良く混合した後必要に応じて乾燥し、
更に加熱することによつて得られる。油脂として
は、魚を原料とした魚油でも、植物から得られた
植物油でも良く、食用として認められている油脂
であればいずれも用いることができる。 本発明で用いられる油脂加工澱粉は上記油脂加
工澱粉のうち40重量%濃度のスラリー粘度が
200cp以上である事が必要である。 油脂加工澱粉の40重量%スラリー粘度を200cp
以上にする方法として澱粉に必要量の油脂を均一
に添加した後、必要ならば熱源を加えて乾燥し又
乾燥を必要としないならばそのまま加熱すれば良
い。加熱の方法としては、常温以上になつている
倉庫等に保存してもよく又、夏場の様に高温と成
る季節においては敢えて加熱する必要はない。要
は添加した油脂が澱粉と反応しクリーム状となる
ような加熱方法であれば良い。 また、本発明に用いる油脂加工澱粉は、40重量
%のスラリー粘度が5000cp以下、好ましくは
3000cp以下が良い。 40%スラリー粘度が200cp以下の油脂加工澱粉
を用いてバツターを調製した場合、性状がクリー
ム状を呈さず、種に必要な量のバツターが付着し
ない為、その後の工程におけるパン粉の付着が不
十分となり又付着してもその量が不十分であつた
り、付着後に包装したりした場合にパン粉が剥が
れ落ちる等の不都合な問題が発生する。 このような本発明で用いる油脂加工澱粉を用い
て適正粘度のバツターを調製する場合、従来の小
麦粉等に較べて高濃度で使用でき、微細な空気を
だきこんで均一なクリーム状のスラリーになるの
で、パン粉の付着が良好であり、しかも油で揚げ
たときに種との結着性がよく、また食感において
も口の中でバサつく様なこともなく種と衣とが
別々な食感を与えるような不快な感じもない。 また、この油脂加工澱粉は、単独で揚げ物用衣
材になるが、必要に応じて、各種穀粉類、蛋白質
類、澱粉質類、乳化剤、調味料、香辛料等を加え
て揚げ物用衣材とすることもできる。 以下に本発明の実施例および応用例を示す。 <実施例> 実施例 1 水分32%に調理したコーンスターチ6.62Kgと水
分32%に調理したワキシーコーンスターチ735g
(配合比:コーンスターチ:ワキシーコーンスタ
ーチ=9:1)にサフラワー油を10g(対DS0.2
%)添加し、関東ミキサーにて30分攪拌しアルミ

迄乾燥する。次にそのものをビニール袋に入れ水
分が飛ばない様にした後、更に乾燥機中にて加熱
を行なう。上記により得られた試作品の40重量%
の澱粉スラリー粘度をB型粘度計にて測定を行つ
たところ700cpであつた(これを本発明品1とす
る)。 次に、ワキシーコーンスターチを使用せず、コ
ーンスターチのみを使用し、上記と同様にして油
脂加工澱粉を得た(これを比較品1とする)。 対照として未加工の小麦粉(薄力粉)に水を加
えB型粘度計にて測定した粘度が700cpになるも
のを調製した(これを従来品とする)。 実施例 2 ワキシーコーンスターチとコーンスターチの配
合比をそれぞれ10:90、25:75、75:25、95:5
としたもの及びワキシーコーンスターチ単独のも
のを用い、実施例1と同様に油脂加工処理を行な
い更に熟成(水分12.5%迄乾燥した後、更に加熱
を行なう)を行なつてB型粘度計による40重量%
のスラリー粘度が700cpになるように調製した本
発明品を得た(これを本発明品2〜6とする)。 また、配合比1:99として同様に処理したもの
を比較品2とする。 実施例 3 ワキシーコーンスターチとコーンスターチの配
合比率を25:75とし実施例1の方法と同様に油脂
加工処理を行つた。加熱熟成の程度によりB型粘
度計による40重量%のスターチスラリー粘度がそ
れぞれ300cp、700cp及び1000cpとなるように調
製した3種の本発明品を得た(これを本発明品7
〜9とする)。 なお、上記と全く同様にしてB型粘度計による
40重量%のスターチスラリー粘度が150cpのもの
を調製した(これを比較品3とする)。 実施例 4 40重量%濃度の混合スターチスラリー(ワキシ
ーコーンスターチ25部、コーンスターチ75部の混
合品)を40℃にまで昇温し、水酸化ナトリウムの
水溶液にてPHを9.0とする。次いで次亜塩素酸ナ
トリウムを対DS当たり0.2%添加し30分反応させ
る。反応後塩酸にて中和し、更に重亜硫酸ナトリ
ウムで消塩した後脱水し、実施例1の方法と同様
にして油脂加工澱粉を得た。得られた澱粉の40重
量%濃度に於けるスラリー粘度は700cpであつた
(これを本発明品10とする)。 <応用例> 応用例 1 実施例1により得られた3種の揚げ物用衣材を
用いてトンカツを作つた。材料のトンカツ用豚肉
をタオルを用いて軽く水切りを行う。次いで3種
の揚げ物用衣材のスラリー中に豚肉を入れ、十分
にバツターを付着させた後、軽くバツター切りを
行う。その後パン粉を付け、予め160〜170℃に加
熱しておいた天婦羅油中に入れ、トンカツを作つ
た。出来たトンカツを比較した場合揚げ物用衣材
として本発明品1及び比較品1を用いたものは、
共に、豚肉と衣とが強くくつつき刃物等で切つて
も衣が肉から剥がれることが無かつた。これに対
し衣材として従来品の小麦粉を使用したものは、
衣が肉と離れ、見た目にも全体が膨らみ、更に刃
物で切つた場合には衣が肉から完全に剥がれ著し
く外観を損なうものであつた。このことは、コー
ンスターチのみでも、又コーンスターチにワキシ
ーコーンスターチをブレンドした澱粉であつても
油脂加工を行ない、更に加熱して澱粉スラリー粘
度が高くなつたものはバツターとして肉と衣とが
剥れない優れた加工澱粉であると云える。 しかし、比較品1を用いた衣はバサつく様な食
感であるが、本発明品1を用いた衣は、食感が改
善されて好ましいものであつた。 応用例 2 実施例2より得られた本発明品2〜6の4種の
バツター用澱粉を用い、常法により作られコロツ
ケのバツターを作り、種にバツターを付けた後、
更にパン紛を付けて予め加熱用意された天婦羅油
中に入れ揚げ物を作つた。 得られたコロツケに関し官能試験を行なつた。
官能試験は12名のパネルにより一対比較法で行な
つた。その結果を次表に示す。

い場所の云わゆるムラが生じている。 700cpの本発明品8:全体にほぼ一定の厚さで
均一にバツターが付き、更にはパン粉の付き具合
もトンカツとしてほぼ好ましい状態となる。 1000cpの本発明品9:やや厚めにバツターが
付くがパン粉の付きも良く、更には、衣を多く付
けたい商品にはバツターの厚さにより、自由にコ
ントロール出来る状態となる。 以上のトンカツを予め170℃〜180℃に加熱して
おいた天婦羅油中で揚げた。出来た試作品を同一
条件にて切断し、種と衣との付着状態を比較した
が、衣材として本発明品7〜9を用いたものは、
いずれも肉と衣とが剥がれる事なく、ほぼ完全に
くつついていた。これに対しスラリー粘度が低い
比較品2を用いたものは、衣と種とが剥れるばか
りでなく、肉にパン粉が直接付着している様でト
ンカツとしては好ましい衣とは云えない。 応用例 4 実施例4で得られた本発明品10の弱酸化処理澱
粉を用いてバツターを作り、コロツケ及びトンカ
ツの揚げ物テストを行なつた。得られた揚げ物の
種と衣との結着状態を見たが、トンカツばかりで
なく、コロツケに於いても剥がれる事なく結着し
ていた。 <発明の効果> 以上、実施例及び応用例をもつて具体的に説明
したように本発明にかかる揚げ物用衣材を用いれ
ば、高濃度で、適度な粘性を有し、かつ均一なク
リーム状のバツターを得る事ができる。このバツ
ターは、種への付着が程良く均一になり、更にパ
ン粉の付着も良好であり、又油であげた場合に衣
と種との結着性が良好なばかりではなく、油脂加
工澱粉の原料として糯種澱粉を用いているので食
感が著しく改良された軟らかい衣を得ることがで
きる。
