Description of the Related Art Generally, most confectioneries and foods, regardless of whether they are Japanese confectionery or Western confectionery foods, are automatically heated and mass-produced after the dough is adjusted and continuously heated and baked by a baking device for mass production. . Various types of firing apparatuses have been proposed and implemented for the purpose of mass production, but the most common type is, for example, the type described in Japanese Patent Publication No. 61-36883. In this type, the burnt plate is mounted on an endless track that runs continuously or intermittently, or the burnt plate itself is configured in an endless manner. The dough for confectionery or food is placed on the track, and the dough is baked while the endless track is passed between the baking zones formed above and below the track. That is, the firing zone is equipped with a gas burner using a mixture of fuel gas and air as a heat source, and the dough placed on an endless track runs continuously or intermittently. The dough is automatically baked by being heated by the upper and lower baking zones.

Even during firing, everything is done manually by craftsmanship. For this reason, when the confectionery or food to be baked changes, the conditions for the gas burner of the baking zone are adjusted until the steady conditions are reached and for the subsequent operations, respectively. Very complicated,
In particular, since this work may be exposed to high temperatures, the degree of fatigue is extremely high, and improvement thereof is desired.

成装置である。From this point of view, the present inventor has previously divided the upper and lower firing zones into at least three firing zones as shown in Japanese Patent Publication No. 63-66496.
We proposed a baking device in which the heating element of the oven is changed to, for example, a gas burner or an electric heating element according to the characteristics of the confectionery or food to be baked. That is, with this baking device, the confectionery baking zone is divided into at least three along the traveling direction of the common moving zone to form the first, second and third baking chambers, and the confectionery baking zone is placed on this moving zone. In the confectionery baking apparatus in which the confectionary dough is baked while sequentially passing through the respective baking chambers, a gas burner is arranged above and below the moving zone in the first baking chamber, and a moving zone in the second baking chamber. In the confectionery baking apparatus, an electric heating element is arranged on the upper part of the above, a gas burner is arranged on the lower part, and an electric heating element is arranged on the upper and lower parts of the moving zone in the third baking chamber.

In other words, there is a great advantage in expanding the range of confectionery to be targeted. However, taking the case of baking one confectionery as an example, each confectionery has its own conditions to be baked, and all the condition settings during baking or operation depend on manual work, and there is a need for improvement here. There is.

However, on the premise of the application of this computer technology, it is necessary to improve the structure of the gas firing apparatus itself and apply it according to the improvement. However, since the conventional gas calcination apparatus is all developed on the premise of craftsmanship as described above, it is almost impossible to apply it as it is.

In an automatic electrothermal baking apparatus for a confectionery or food that automatically bakes the confectionery or food by an electric heating heater arranged in the upper and lower firing zones, the upper and lower firing zones are used in the running direction of the endless track. Enter the temperature information consisting of the reference temperature set to meet the baking conditions of the confectionery or food to be baked and the buffer area defined in relation to this reference temperature, and enter this buffer for each gas burner. A control memory device for inputting heater information consisting of operating conditions or operating conditions determined based on the zone and reference temperature, and operating temperatures in the upper and lower firing zones are detected at multiple locations. A plurality of temperature detecting elements, and a voltage adjusting device for adjusting the voltage of the electric power supplied to each electric heating heater mainly in accordance with the heater information. In addition, it is characterized in that the amount of electric heat to each electric heating heater is controlled by a control signal transmitted as a result of calculation control based on the temperature detected by the temperature detecting element.

The operation mode or use condition of the electric heating heaters 41, 42, 43 is determined depending on the temperature curve required for the confectionery or food to be baked and the running speed of the endless track.
The reference temperature is set from 2, 33, 41, 42, 43, and is determined as a heater pattern based on the reference temperature and the buffer area related thereto. For example, when firing a shoe of shoe cream, each block 31, 3

0 ° C, 170 ° C, 200 ° C, 200 ° C, 180 ° C, 16
Bring to 0 ° C. At this time, in each block, the buffer area is defined around the reference temperature. The buffer area is determined according to the sweets and foods to be adjusted, but usually ± 5
It is preferable to set the temperature at or below ° C. In addition, regarding the electric heating heater for each reference temperature in each block, the operation mode and usage conditions of the electric heating heater in each block are described as follows, for example, A, B, C, D, and E heat points. -Divided into patterns, these patterns are input in the control storage device 5 in advance as information. For example, the reference temperature in the block 41 on the lower inlet side is set to 200 ° C., and the buffer area ± 2
When the temperature is set to ° C, as will be described later, when a power source of 200 V is used, the heater patterns A, B, C, D and E of the electric heating heater 411 are set as follows. A: Regardless of the detected temperature of the block 41, the voltage is 200 V and the amount of electric heat is 2 when the temperature is raised at the start of operation.
Pattern of 0 kW, B ... Pattern of which the detected temperature of the block 41 reaches the buffer region of the reference temperature, that is, within 198 to 202 ° C., the voltage is 150 V and the electric heat amount is 11.25 KW, C. From the point of temperature control, voltage 145V and electric heat 10.5K
W pattern, D ... Voltage of 140V and heat capacity of 9.8KW for temperature control
Pattern of E ... When the detected temperature of the block 41 exceeds the upper limit of the buffer area, the pattern of electric power of 5 kW,

Do. In this case, for example, in the firing of the shoe, it is not necessary to heat the block 31 on the introduction side of the upper zone too strongly, but in the block 41 on the inlet side of the lower zone, the preheating of the block 31 is also taken into consideration. Then, it is necessary to heat it sufficiently. Further, since the lower side of the shoe needs to be heated strongly from the beginning, the electric heating heater 411 in the block 41 is first heated by applying the A pattern from the control storage device 5. If it exceeds the upper limit of the buffer area, an E pattern is given. During baking of the dough, each pattern of B, C, D and E is appropriately selected in the control storage device 5, and the voltage adjusting device 71 or 72 is operated by this command, and the operating temperature of the block 31 is within the buffer region. Held in.

A device for firing by means of
In addition to setting a reference temperature that is determined according to the firing conditions of the food to be baked and the buffer temperature range that is determined in relation to this reference temperature, and inputting these as temperature information into the control storage device, A heater that individually determines the operating mode or usage conditions of the electrothermal heater of the zone.
It comprises a control storage device for inputting the data of the heater, a temperature detecting element for detecting the operating temperature in the upper and lower firing zones, and a voltage adjusting device for adjusting the voltage of the electric power supplied to each electric heating heater. It is a thing.
