一方、葛粉などの澱粉に砂糖を加えて熱湯で練り、きし
めんのように細長く切った「クズ切り (登録商標) 」
は、一般に馴染みの深い食品であり、そのつるりとして
特有の食感と特有の風味により季節的な食品として、古
くから人々に愛好されているが、クズ切りは、デザート
食品としては形状が太くてコシがあり、澱粉特有の糊っ
ぽさや風味が残っているので、現代人の要求する食感や
喉越し感を十分に満たすものではなく、さらに改良する
余地が残されていた。そこで、本発明の発明者らは、こ
のクズ切りの食感や喉越し感を改良し、現代人の要求す
る食感や喉越し感を十分に満たす美味しいデザート食品
が得ることができたが、細線状ゲルの間に気泡をかみ込
みやすく、また一旦かみ込むと揺するなどしても容易に
脱気できず、その結果、密封後に加熱殺菌を行うと上記
気泡の大半が浮き上がってヘッドスペースを形成するの
で、容器内の残存酸素量が多くなり、保存中の品質の劣
化を早めるという問題があった。2. 用する。これらのゲル化剤を、最終製品である細線状ゲ
ル中の濃度が0.5〜1.4重量%、特に0.7〜1.1重量%
となるように使用して、細線状ゲルの破断力が15〜70g
、特に35〜65g となるように調製するのが好まし
い。破断力が15g を下回ると細線状ゲルが切れ易くなっ
て食べ難く、またゲルとしての存在感、食感を認識しに
くくなり、一方、70 gを上回ると堅くなり、食感、喉越
し感が悪く食べ難くなるからである。なお、従来のクズ
切り製品の破断力は、ほぼ77〜345 g であって、かなり
