リエチレン樹脂でショアーD硬度57度程度のものが用
いられている。これらの樹脂によって形成したまな板1

る反撥性が少ないので、包丁等の刃当たりがよい上、調
理対象が滑りにくく、極めて調理がし易いものである。
また、調理による刃物の傷に対して、復元性があり、一
旦傷がついても該部分は復元力により密着してしまうの
で、凹凸や溝などがつきにくく、まな板表面の平面性が
よく保たれる。抗菌性ゼオライトは、該傷の内部で細菌
が繁殖するのを防止するために加えられる。また3の層
は、まな板全体に剛性を与え、刃物がまな板に深く傷を
与えても耐久することを可能とし、しかも衝撃を吸収す
るので、例えば従来のゴム製まな板では用いることので
きなかった出刃包丁による調理などを可能とする。層3
