液混合食品を製造した場合、固形物原料と液体原料とを
混合した際に両者が風味的に充分なじまない、といった
問題点があった。即ち、上記方法は固形物原料を加熱殺
菌処理する場合、該固形物原料は水あるいは油等の液体
と共に加熱殺菌処理されるため、該加熱殺菌中に上記液
体が各々の固形物内に浸透すると共に該固形物内のエキ
ス分も該液体中に溶出する。そして上記液体を除去して
残った固形物と、予め加熱殺菌処理を施しておいた液体
原料とを混合する。従って最終製品中の液体原料と固形
物原料とは各々の殺菌条件で別途加熱殺菌処理されてお
り、これらの混合物は同じ容器内でいっしょに加熱処理
されたものではない。その結果、液体原料の熱劣化は防
止できるものの、固形物原料と液体原料のそれぞれのエ
キス分が相互に浸透し合わないため、両者の風味的なな
じみ(以下単に「なじみ」という)が悪くなってしま
う。

々の原料のエキス分が相互に浸透しあうため、風味、味
覚がより向上する、といった顕著な効果も併せて奏し得
る。
