ないが肉質がボソボソになり安かった。本発明は以上の
欠点を解決し、もち米を食品以外にも幅広く利用するも

【実施例】以下、本案の実施例について説明する。一度
冷凍した豚肉のモツ煮は、従来通りの方法で煮込むと3
時間から6時間を要して煮込むものである。先ず、冷凍
した800gの豚モツを鍋で水ゆでし、一度油抜きをす
る。800gの豚モツを、2つの鍋に400gずつ均等
に分け、それぞれに適量の水を加える。適量のもち米を
混入した鍋をA、水だけの鍋をBとする。A、Bの鍋を
同時に火に掛けて1時間煮込む。適量のもち米を混入し
た鍋Aの肉は、柔らかく、ツルツルした状態を保ち冷え
ても堅くならない。水だけの鍋Bの肉は、ザラザラとし
た舌触りで熱いときは柔らかいが、冷えると堅くなって
しまう。もち米は、水1リットルに対して、粉末状の場
合は、耳かき3杯分位が適当な量である。しかし、多少
の量の増加では、大きな影響が現れなかった。
