理装置であって、 前記ガス燃焼手段上に設定されて前記鍋と非接触で前記
鍋の外表面温度を検出する温度検出手段と、 前記調理物の加熱に適した温度が設定され、前記温度検
出手段で検出された前記鍋の外表面温度に対応して求め
られる定常偏差を、前記外表面温度から減算することに
より、前記鍋内の調理物の温度を算出し、この算出温度
と設定温度とを比較し、前記算出温度が設定温度以下で
あれば、前記ガス燃焼手段に対する燃焼ガスの供給量を
増加させ、前記算出温度が設定温度を越えている場合に
は、前記ガス燃焼手段に対する燃焼ガスの供給量を減少
させる制御手段と、 を備えたことを特徴とする加熱調理装置。
