This was not possible, and the treatment time tended to be as long as several tens of minutes to several hours, and the thicker the bag, the more time was required. Therefore, there is a problem that the food is exposed to high temperature for a long time and the quality is deteriorated and the flavor is deteriorated.

It needs to be weighed or dispensed to fill the bag after processing, and it is easy to lose its shape. In addition, juice such as drip that has exuded from the solid matter during the sterilization process accumulates at the bottom of a large pressure cooker. It is very difficult to fill each bag with solids in small portions,
The current situation is that the drip containing the umami component is discarded.

First, the solid matter (a) is put into the retainer (d) one pack at a time. In this case, it is desirable to measure and put in. Then, the retainer (d) charged with the solid matter (a) is pushed into the solid matter pushing device (1).
Thus, the inlet valve (2b) is opened in the pressure cooker (2a) of the sterilization tank (2), and a predetermined number of pieces are sequentially charged and loaded. In this case, the retainer (d) is not fully packed in the pressure cooker (2a), but several retainers, for example, five retainers, are left with a gap between them. After loading, the inlet valve (2b) is closed and of course the outlet valve (2c) is closed from the beginning.
In this state, the electromagnetic on-off valve (7) of the pressure reducing pipe (8) is opened, the vacuum pump (not shown) is driven, and the pressure cooker (2a)
The inside is deaerated under reduced pressure (preferably -700 mmHgG or more). After this depressurized degassing, the electromagnetic on-off valve (7) of the decompression pipe (8) is closed, and the electromagnetic on-off valve (1) of the steam supply pipe (11) is
0) is opened, and steam (saturated steam) is injected into the pressure cooker (2a) from a steam supply source (not shown) to raise the temperature. In this case, the amount of steam injected into the pressure cooker (2a) is adjusted by the supply amount adjusting valve (9) and held at a constant temperature for a certain time (for example, 2 kg / cm 2, 133 ° C., 30 seconds to 10 seconds).
Minutes). As a result, the solid matter (a) contained in each retainer (d) is uniformly heat-sterilized. In this way, by decompressing the pressure cooker (2a) and injecting steam, air bubbles in the tissue of the solid matter (a) such as vegetables can be degassed and prevented from boiling down during temperature rise and sterilization. At the same time, the boiling point of water contained in the solid (a) is lowered, and sterilization can be achieved in a short time.
The heat damage to the solid matter (a) can be reduced. Then, during this time, the rocking device (20) slowly rocks the pressure cooker (2a) up and down like a seesaw. For example, 30
Rock at a pitch of -60 seconds for 3-5 minutes. Due to this swing, the retainer (d) rolls on the guide rails (2e) ... from the higher position to the lower position in the pressure cooker (2a) by the gap left in advance. While moving back and forth, this will be repeated alternately. That is, the retainer (d) repeats right rotation and left rotation alternately, and a stop shock is given each time, and the solid material (a) inside is mixed and stirred by the polygonal inner peripheral surface, All the peripheral surfaces are brought into contact with each other one after another by heated steam and sterilized uniformly.

Discharge and return to atmospheric pressure. After that, the electromagnetic on-off valve (12) of the exhaust / atmosphere introducing pipe (13) is closed, and the pressure reducing pipe (8)
The electromagnetic on-off valve (7) is opened again and the pressure in the pressure cooker (2a) is reduced by the vacuum pump to vacuum-cool the solid matter (a) to a proper temperature at a proper speed (for example, 1
Cool from 00 ° C to room temperature). After cooling, decompression pipe (8)
The electromagnetic on-off valve (7) is closed and the exhaust / atmosphere introducing pipe (13)
Open the solenoid on-off valve (12) and filter (not shown)
The atmosphere sterilized in step 1 is introduced into the pressure cooker (2a). Then, the outlet valve (2c) is opened, the sterilized solid (a) is taken out into the clean booth together with the retainer (d), and the liquid (b) is sterilized separately by the filling machine and the packaging machine (4). ) And the inside of the bag (c) and sealed.
The retainer (d) is then reused. And
The product taken out from the filling machine and the packaging machine (4) is used as an intermediate product or a final product, and the intermediate product is subjected to retort treatment, refrigeration / freezing treatment. In the pressure cooker (2a), the next loading of the solid matter (a) is carried out as described above, sterilized, and taken out. Thereafter, by repeating this, the solid matter (a) is sterilized in a batch manner in the pressure cooker (2a) of the sterilization treatment tank (2) in a predetermined number in a state where the solid matter is stored in the retainer (d) one by one.
