Claims (1)
- 【特許請求の範囲】 1.5−45重量%のS2Uトリグリセリド、 0−60重量%のSU2トリグリセリド、 5−95重量%のU3トリグリセリド、 0−8重量%のS3トリグリセリド (Sは、16-24の炭素原子を有する飽和脂肪酸であり、Uは、少なくとも18の 炭素原子を有する、単一不飽和又は多不飽和脂肪酸である) のトリグリセリド分布を有し、少なくとも0.3の、C8−C24の飽和脂肪酸:C16 飽和脂肪酸の重量比を有し、5重量%未満しかジグリセリドを含有せず、SA FA含量が35重量%未満であり、NMRパルス(安定化されていない)により測 定されたその固体脂肪含量が、 N5 :12−30、 N35:7未満、 (N5−N20):10未満 である、健康に良いマーガリン又はスプレッドに適する脂肪組成物。 2.トリグリセリド分布が、 10−25重量%のS2U、 5 −40重量%のSU2、 50−84重量%のU3、 1 −5 重量%のS3 から成る、請求項に記載の脂肪組成物。 3.SAFA含量が30重量%未満、好ましくは25重量%未満である、請求項1又 は請求項2に記載の脂肪組成物。 4.固体脂肪含量が、 N5:12−18、 N35<3、 (N5−N20)<5 である、請求項1乃至3のいずれか1請求項に記載の脂肪組成物。 5.脂肪組成物が、少なくとも1.5重量%、好ましくは少なくとも4重量%のベ ヘン酸を含有する、請求項1乃至4のいずれか1請求項に記載の脂肪組成物。 6.脂肪組成物が、ヒマワリ油、オリーブ油、コーン油、大豆油、StOSt、PO St、POP、BOB、StOO、POO、BOO、BLnB、StLnSt、PLnSt、PLn P、パーム油ステアリン、St3、P3、B3、O3、Ln3、LnO2、Ln2O(式中、P =C16:0、St=C18:0、B=C22:0、O=C18:1、Ln=C18:2)のトリグリセリ ドの少なくとも2つのブレンドである、請求項1乃至5のいずれか1請求項に記 載の組成物。 7.前記組成物が、 30重量%より多い、好ましくは45重量%より多いSUS含量を有し、N20>20 、好ましくはN20>45を示す、脂肪成分(A)が5−40重量%、 45重量%より多い、好ましくは60重量%より多いS3量を有する脂肪成分(B)が 0−10重量%、及び 45重量%より多い、好ましくは60重量%より多い(U2S+U3)量を有する脂 肪成分(C)が50−95重量% のブレンドである、請求項1乃至5のいずれか1請求項に記載の脂肪組成物。 8.(A)、(B)及び、(C)が、15−25重量%、0.5−3重量%及び70−90重量%の量 で存在する、請求項7に記載の脂肪組成物。 9.脂肪成分(A)が、16乃至24の炭素原子を有する脂肪酸と液体油との酵素的エ ステル交換により生成される、請求項7に記載の脂肪組成物。 10.脂肪成分(A)がN25>45、好ましくはN25>55を示す、請求項7に記載の脂 肪組成物。 11.脂肪成分(B)がパーム油ステアリンである、請求項7に記載の脂肪組成物。 12.脂肪(A)が、シア画分、イリッペ又は、BOB、BLnB、AOA、AOB( A=C20:0)の少なくとも1つのトリグリセリドを高含量含む脂肪又はココアバ ター同等物である、請求項7に記載の脂肪組成物。 13.連続性の脂肪相の少なくとも一部が、請求項1乃至12のいずれか1請求項に 記載の脂肪から成る、20乃至80重量%の脂肪含量を有する、スプレッド。 14.前記スプレッドが、50より大きい、好ましくは120より大きい、20℃におけ るヘイトン(Haighton)による硬度を示す、請求項13に記載のスプレッド。
