Description
Claims (1)
- 【特許請求の範囲】 1. 13から19まで、好ましくは14から18まで、最も好ましくは15か ら17までのハンターL色を有するローストすり挽きまたはフレーク化コーヒー 製品に関するものであって、前記コーヒー製品は、50から100%、好ましく は70から100%、最も好ましくは90から100%の高酸味タイプコーヒー と、0から30%、好ましくは0から20%、最も好ましくは0から10%の低 酸味タイプコーヒーと、0から50%、好ましくは0から30%、最も好ましく は0から10%の中酸味タイプコーヒーとを含み、下記の (1)0.4から0.6%、好ましくは0.42から0.58の浸出固形分レ ベルと、 (2)少なくとも1.52、好ましくは少なくとも1.53、より好ましくは 1.6から3.0、最も好ましくは1.8から2.7の滴定酸度と、 (3)少なくとも1.25の浸出吸光度、ただし滴定酸度が1.52から2. 0の範囲内である場合、前記浸出吸光度は、以下の式により定義される値以上で ある、 1.25+[0.625x(2.0−TA)] (ここで、TAは、滴定酸度である) 特性を有する消費可能なコーヒー飲料を提供することを特徴とするコーヒー製品 。 2. 1.3から1.9の浸出吸光度を有するコーヒー飲料を提供することを特 徴とする請求項1に記載のコーヒー製品。 3. 滴定酸度が1.58から2.2の範囲である場合、前記浸出吸光度は、以 下に示す式で定義される値以上であることを特徴とする請求項1に記載のコーヒ ー製品。 1.25+[0.625x(2.2−TA)] 4. 浸出吸光度が以下の式で定義された値以上であることを特徴とする請求項 1に記載のコーヒー製品。 2.475−[0.075x(コーヒーのハンターL色)] 5. 下記(1)〜(3)の特性を有する消費可能なコーヒー飲料を提供するた めのローストすり挽きまたはフレーク化コーヒー製品の製造方法であって、 (1)0.4から0.6%の浸出固形分レベル (2)少なくとも1.52、好ましくは少なくとも1.58、より好ましくは 1.6から3.0、最も好ましくは1.8から2.7の滴定酸度 (3)少なくとも1.25の浸出吸光度、ただし滴定酸度が1.52から2. 0の範囲内である場合、浸出吸光度は、下記の式により定義される値以上であり 、 1.25+[0.625x(2.0−TA)] (ここで、TAは、滴定酸度である) 前記方法は、 (a)前乾燥されていないか、または部分的にのみ前乾燥された、50から1 00%、好ましくは70から100%、最も好ましくは90から100%の高酸 味タイプコーヒー豆と、0から30%、好ましくは0から20%、最も好ましく は0から10%の低酸味タイプコーヒー豆と、0から50%、好ましくは0から 30%、最も好ましくは0から10%の中酸味タイプコーヒー豆を含む生コーヒ ー豆を、豆のバーニングとチッピングを避ける条件下、ハンターL色が13から 19、好ましくは14から18、最も好ましくは15から17となるまで急速ロ ーストするステップと、 (b)ローストコーヒー豆を挽くステップと、 (c)必要に応じてすり挽きコーヒー豆をフレーク化するステップと を含むことを特徴とする製造方法。 6. 生コーヒー豆は、10秒から5.5分、好ましくは1から3分、華氏35 0度(177℃)から華氏1200度(649℃)、好ましくは華氏400度( 240℃)から華氏800度(427℃)の温度で急速ローストされることを特徴 とする請求項5に記載の方法。 7. コーヒー製品が、1.3から1.9の浸出吸光度を有するコーヒー飲料を 提供することを特徴とする請求項5から6のいづれかに記載の方法。 8. 浸出吸光度が、以下に示す式で定義される値以上であって、 1.25+[0.625x(2.2−TA)] 1.58から2.2の範囲の滴定酸度を有するコーヒー飲料を、コーヒー製品が 提供することを特徴とする請求項5から6のいづれかに記載の方法。
