ズウイルス剤,細菌付着防止剤,保湿剤,増粘剤,およ
びL−フコースの供給剤として医薬品,機能性食品,化
粧品,バイオテクノロジーおよびその他工業で利用可能
である酢酸基の置換度の異なるフコイダンを簡易に製造

る.従って,本藻は沖縄県の有望な生物資源である.先
に,オキナワモズクからフコイダンを製造してその化学
成分を調べた結果,フコイダンに酢酸基が多量置換する
ことを発明した.しかしながら,この酢酸基はアルカリ
の条件下で容易に解離することが分かったので,本発明
では酢酸基の置換度とアルカリの濃度との関係を明らか

【発明の構成】発明者は上記の問題点に着眼し,ミキサ
ー或いはホモゲナイザーを使用して細胞壁を破壊したオ
キナワモズクをアルカリ(0.01−0.50モル)液
に調製してフコイダンを抽出後(室温,2時間),酸で
中和を行い,スプレードライアー,又はアルコール,又
は凍結乾燥によりフコイダンを製造した.表1に0.0
12モルの水酸化ナトリウムで処理した場合のフコイダ
ンの化学分析値を示した. なお,収率は湿潤藻体に対して算出した.また,全糖お
よびウロン酸含量はフェノール硫酸およびカルバゾール
硫酸法で求めた.さらに,硫酸含量はバリウム沈殿法で
求めた.また,L−フコースとD−キシロースは液体ク
ロマトグラフィーによった.この条件で処理したフコイ
ダンの1HNMR(500MHz:日本電子製)のスペ
クトラムを図1に示した.L−フコースと酢酸のメチル
プロトンのシグナルの面積比から両者の構成比は約9.
0:1.0であった.水或いは酸で抽出したフコイダン
のL−フコースと酢酸の構成比はそれぞれ5.0:1.
0或いは4.8:1.0であったことから,上記のアル
カリの条件で約1/2に酢酸が減少したことになる.ア
ルカリの濃度を変えて(0.01−0.50モル)オキ
ナワモズクからフコイダンを抽出すると酢酸基の含量が
著しく変動した.即ち,高いアルカリ溶液でオキナワモ
ズクを処理すると,酢酸基は著しく減少した(例えば,
0.2モル水酸化ナトリウム,室温,2時間撹拌でゼロ

Since the ratio was 0 or 4.8: 1.0, the amount of acetic acid was reduced to about 1/2 under the above alkali conditions. When fucoidan was extracted from Okinawa mozuku at different alkali concentrations (0.01-0.50 mol), the content of acetate groups fluctuated significantly. 【発明の効果】以上述べた如く,天然および養殖オキナ
ワモスクを水または酸で抽出することに加え,種々の濃
度のアルカリ溶液で抽出すると,酢酸基の量が著しく変

が著しく変動するのみで,フコイダンとしての性質に変
化がなく,多くの分野(医薬品,食品,化粧品,および
