拌装置をセット及び解除自在に装備した調理釜に於い
て、逆円錐状又は円筒状に形成された釜側部の下方に連
続する釜底部を半球状に形成するとともに、攪拌装置の
攪拌羽根が前記半球の略中心を回動中心にして略縦方向
に回動することにより、攪拌羽根先端のヘラが釜底部の
内周面を摺擦するように形成し、且つ、ジャケットの上
縁を釜側部の中間高さに位置させるとともに、該ジャケ
ット内の釜側部と釜底部との境界部分高さに隔壁を設け
て、上部ジャケットと下部ジャケットとに分離し、更
に、下部ジャケットに蒸気導入管の主路を配管するとと
もに、この主路から分岐した蒸気導入管の支路を上部ジ
ャケットに配管し、且つ、該支路に開閉バルブを介装し
たことを特徴とする調理釜。1.
