Abstract

PURPOSE: To prepare a sugar ester useful as a baking powder for bread, etc., under mild conditions, by reacting a compound obtained by bonding a tri-lower alkyl-tin with a specific sugar derivative wherein all of the OH groups except one are protected, with an aldehyde, in the presence of a haloimide-based oxidizing agent.
CONSTITUTION: A sugar derivative R-OH (R is protected sugar residue) wherein all of the OH groups except one are protected with a group such as alkyl(ether), isopropylidene group, etc., is made to react with a bis(tri-lower alkyl-tin) oxide of formula I (AlK is lower alkyl) to afford a compound II, which is converted to the objective sugar ester of formula III by reacting with an aldehyde in the presence of a haloamide-or haloimide-based oxidizing agent.
USE: An emulsion stabilizer for ice cream, etc., an anti-blooming agent, a releasing agent etc. for chocolate, etc.
