Abstract
PURPOSE: To prepare a light brown product as clear as the conventional vegetable oil even fried in a hardened oil or palm oil, without increasing the frying temperature, by adding a specific substance to the raw material.
CONSTITUTION: Sugars, e.g. glucose, in an amount of 0.05W0.5wt% based on soybean milk are added to the milk and used for preparing a fried product of soybean curd, e.g. fried bean curd, namaage, or ganmodoki.
