Abstract
PURPOSE: To provide a crystallized soft candy, having improved moisture absorption, shape retension, and chewability, containing saccharides composed mainly of lactose and fructose, and lactoalbumin.
CONSTITUTION: A crystallized soft candy composed of (A) 100 parts by weight (solid basis) of saccharides consisting of (a) 25W55 parts of lactose, (b) ≤60 parts of fructose, and (c) 0W20 parts of sugar alcohol, and (B) 2W15wt%, based on the whole soft candy, of lactoalbumin and other conventional additives.
